Antipasto Grilled Cheese Sandwich {Gluten Free}

I am a lone wife on this particular Saturday evening.

So what did I decide to do!?  I did what any other woman whose husband was gone for the evening would do.  Fed the kids chicken nuggets, quickly bathed them and promptly sent them off to bed early explaining that the sun must have lost track of time because it was, in fact, time for bed.

Once the singing, hugs, and kisses were through I snuck downstairs to make a dinner which would not necessarily be considered dinner to my meat and potatoes man.

I’m all for meat and potatoes but every once in awhile a girl’s just got to have something simple, fast, and cheesy.

You know me and my cheese.  Get outta my way.

Tonight’s particular grilled cheese concoction was sponsored by Udi’s Gluten Free White Bread.  I know what you’re probably thinking…”gluten free?  You don’t have a problem with gluten.”  No, I don’t.  At least not that I know of and I hear that if I did I would most definitely know.  I do, however, have plenty of friends who do have a gluten intolerance.

If you do have a gluten intolerance don’t worry.  You are not alone.  There are so many wonderful company’s like Udi’s who provide a wonderful product so you don’t have to change all of your eating habits.  Honestly, if I didn’t know this bread was gluten free I would have never guessed it.  The texture and taste were perfect.

So as I type, wiping the buttery crumbs from my fingers, I contemplate making another.  Just for the heck of it.  The bread {and the cheese} was that good.

Antipasto Grilled Cheese Sandwich {Gluten Free}

Prep Time: 2 minutes

Cook Time: 3 minutes

Total Time: 5 minutes

Yield: 1 sandwich

Ingredients

  • 2 slices Udi's Gluten Free White Bread
  • 3 slices salami
  • 2 peppercinis, sliced
  • 4 slices bell pepper
  • 2 slices mozzarella cheese
  • 1 tblsp butter, softened

Instructions

  1. Preheat a small skillet over medium heat.
  2. Spread butter on one side of each of the slices of bread.
  3. Place one slice of bread, butter side down, in the skillet. Top with 1 slice of cheese, salami, peppercicnis, bell pepper, and the second slice of cheese. Place the second slice of bread on top, with the butter out.
  4. Grill until lightly golden and the cheese is beginning to melt. Carefully flip and toast the other side until golden.
  5. Serve immediately.
