Now this is what I call a salad.
Ever since I can remember my aunt has made these huge, bigger than your head, antipasto salads for family get togethers and holidays.  She is known for her antipasto salads.
My first thought when I moved from my home town to Utah was how am I going to survive without this salad!?  Then when I heard she was moving to Idaho {and not just hop over the state line Idaho, like 10 hour drive from where I live now to Idaho} I knew something had to be done.  I had to master the antipasto salad.
You know me. Â Anything with cheese can’t be bad and if eating too much cheese is bad then I don’t wanna be good.
This salad has all the fixins. Â Plus, a little lettuce.
I’ve actually been whipping up this salad a lot lately ever since my son’s birthday party last week when he chose pizza for dinner. Â Homemade pizza. Â Pizza which required a lot of cheese, pepperoni, and salami. Â A big Costco size bag of cheese. pepperoni. salami.I had to do something with it.
Fortunately for me I also had a Costco size bag of hearts of romaine also plus a container of mixed greens. Â I actually love buying those in bulk because I feel like I save a lot more money. Â It is a fabulous way to get more vitamins and ever since OXO sent me one of their salad spinners to try{I’m in love} I’ve been storing freshly prepared salad in my fridge.
I don’t have a lot of time and when it comes right down to it if I have the choice to wash, cut, prepare, and mix a salad or slap a piece of bread with peanut butter and jelly the sandwich will win every time. Â Hands down.
But, if all I have to do is grab a heap of lettuce toss in whatever sounds good at the moment, toss with a little dressing and eat?

Ingredients
- 1 head of romaine, cleaned and cut
- 3 cups of greens blend containing lettuce such as radicchio, endive, arugula
- 15 slices pepperoni, sliced in strips
- 10 slices salami, sliced in strips
- 2 slices ham, sliced in strips
- 1 cup mozzarella, grated
- Olive Oil and Vinegar
- Peppercinis, sliced red onion, sliced red peppers, optional
Instructions
- Clean, cut, and combine the lettuce in a large bowl. Add the sliced pepperoni, salami, and ham. Gently toss.
- Whisk together olive oil and vinegar with a 2:1 ratio or 2 tblsp oil for every 1 tblsp vinger. Season with salt and pepper.
- Pour dressing over salad, toss gently, and top with cheese. Top with sliced peppercinis, red onions, red peppers, olives, etc, if desired.
- Serve.

Green olives (with pimento), sliced cucumbers and red onions over spinach leaves with a homemade fresh herb vinagrette (fresh dill, tarragon and cilantro, green onion, dijon mustard, lemon juice and oil). Yummy!
I totally need this salad spinner…Right now I’m loving spinach with fresh mozz, tomatoes, greek olives and walnuts. YUM

Gorgeous salad. I love the addition of salami and pepperoni in pretty much everything and anything! My favorite salad mix-ins are strawberries and goat cheese. It’s amazing how well they go together.
