Apple Blueberry Crisp

I can hardly grasp the words to describe the smells wafting through the kitchen while this baked.

Pure buttery, brown sugar, apple and blueberry goodness.

I can remember the kitchen smelling like this when I was a child.  It kinda makes all the everyday stresses in life melt away, even for just a moment.  My mother would make apple crisps often.  We had at least 4 apple trees in our backyard when I was a little girl and as soon as they started falling from the tree we were in business.

A lot of times they had served as a snack for a bug or two so they would have a hole or two.  My mom would simply cut out the eaten part and dice them up into a pie or crisp.  They were perfect for that.

Nowadays I don’t live close enough to help them use up their bags of apples but I don’t mind forking out a dollar or two for something special.

Especially if that something special is something I know mr will love.  Father’s Day is coming up this weekend and I think I’ll make another one of these crisps just for him.  And I’ll probably have a bite or two myself.

Apple Blueberry Crisp

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Ingredients

  • 2 cups blueberries, fresh or fozen
  • 3 Granny Smith Apples
  • 1 tablespoon lime juice or the juice from half a lime
  • 1 tablespoon granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1/4 cup oats
  • 1/2 cup sliced almonds
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/3 cup butter, melted

Instructions

  1. Preheat oven to 375°
  2. Peel and dice the apples into 1/2" cubes. Place them in a medium bowl and toss with lime juice.
  3. Add the blueberries and fold until combined.
  4. Pour into a pie dish or 8 X 8 baking dish. Sprinkle with the granulated sugar.
  5. In a small bowl mix the brown sugar, flour, oats, almonds, cinnamon, and ginger. Pour in the butter and mix with a fork until the mixture resemble crumbles.
  6. Spread the crumble topping on top of the fruit. If you would like top with a few more almonds.
  7. Place in the oven and bake for 30 minutes or until the top is browned and the filling is bubbly.
  8. Allow to cool slightly and serve with vanilla ice cream.

    So I think these look awesome… Only that I don’t like chomping on blueberries. What do you think about making a blueberry pureé to add in instead?

      Good question Jesse. When the crisp gets baked the blueberries do soften and some pop. I think if you used frozen blueberries you wouldn’t have any blueberries to bite into but you may want to gently smash them with a fork before baking. I’m worried a puree might make the crisp a bit runny but you could certainly give it a try. Either way I think you’ll love the combination of both fruits. My favorite part is the crisp topping anyways. ;)

  13. fruit crisp is a summer long dessert. works well with most of the fruits and the scoop of vanilla ice-cream on top makes it even better!

  14. Delicious! On a hot summer day, I’d love to have this fruit crisp with vanilla ice cream! Such a luxury! I always love blueberry crisp, but adding apple is a great idea!
