Fall is, quite honestly, my favorite season of the year. Â It’s so warm and inviting. Â And there is a sense of anticipation as the holidays get closer.
Of course the germs that come with the colder weather are not at all my favorite.  With four boys cold and flu season is usually a war zone.  Last year I experienced what will be known forever more as “Armegeddon-puked-on” and so far this year I’m on my second cold in that many months.
I could go for some ridiculously easy after school snacks and perhaps a hot bowl of chicken soup.
Luckily I’ve got the after school snacks covered. Â The chicken soup, well, any takers!?
The kids {and I} totally went for these Apple Cinnamon Chex and I have a wonderful neighbor to thank for it. Â In fact I have quite a few extremely talented neighbors who collaborated in putting together a cookbook with their favorite recipes. Â Which is where I found this recipe and knew I just had to make it.
Sweet. Salty. Crunchy.
No brainer.
Ingredients
- 5 cups Chex Cereal, any flavor will do
- 1 cup whole almonds
- 1/4 cup butter
- 1/3 cup packed brown sugar
- 2 tablespoon light corn syrup
- 1 teaspoon ground cinnamon
- 1 cup chopped dried apples
Instructions
- In a large, microwave safe bowl, mix the cereal and almonds. Set aside.
- In a medium, microwave safe bowl, place the butter, brown sugar, corn syrup, and cinnamon. Microwave on high for 2 minutes, stirring once in between. Pour over cereal and almonds, stirring until coated.
- Place the coated cereal into the microwave and continue to heat on high for another 3 minutes, scraping the bowl after every minute.
- Toss in the apples and microwave for another 2 minutes just until the apples begin to brown on the edges.
- Spread onto a baking sheet covered in wax paper, sprinkle with a little salt, and allow to cool. Store in an airtight container.
