Warning: Cheesy Hot Mess Ahead. Â Proceed With Caution.
As much as I love my mom’s artichoke dip I can’t come up with a good enough excuse to make it very often.
So I came up with one.
Turn it into dinner. Â Especially when mr is gone.
You’ve heard the phrase when the cat’s away, the mice will play, right? Â Well, when the mr is away the wife will make cheesy, hot messes loaded with carbs and vegetables he doesn’t love and get rid of all of the evidence before he comes home.
Oh yes I did.
As much as I hate when he is gone this kinda makes up for it. Â Of course this doesn’t do anything for my ice cold feet in bed. Â Dang.
Ingredients
- 1 lb penne
- 1 - 15 oz can artichoke hearts
- 1 - 8 oz can diced green chiles
- 1 cup mayonnaise
- 1 cup parmesan cheese, shredded
- 1 cup mozzarella cheese, shredded
Instructions
- Preheat oven to 350°
- Bring a pot of water to a boil and cook the penne until al dente.
- In a large bowl mix the rest of the ingredients except the mozzarella.
- Add the pasta to the artichoke mixture and stir until combined.
- Pour into a baking dish and top with mozzarella cheese. Bake for 20 minutes.
- To brown the cheese on top broil for a minute.
- Serve immediately.

Comfort food to the max! It looks so good…I do the same thing when my guy is gone.
