Let it be written that I am not a cool parent for lack of trying.  The boys and I had been discussing these chocolate doughnuts for weeks.  I would tell them, “Okay, today we are filming Kids Can Cook Toosday™.” only to have it fall through or have another sick child to care for.  Finally, yesterday, we were able to make them after having to wait and wait and wait.

Let it also be written that anyone in their right mind who decides it’s a good idea to film kids making anything must be a saint.  Or not at all in their right mind.  Seriously.  You should see the outtakes.  In fact, I will probably create an outtakes roll for the end of the year that you all can enjoy.

I seriously love my kids and, despite my own short comings of getting wrapped up in trying to wrap it {hehaw}, I love doing this.  While I was editing the video I couldn’t help but laugh.  They are such goof balls.  They must get that from my side of the family.

And speaking of goof balls…you may notice my signature pair of flannel pjs in part of the video.  What can I say?  I work from home.  If we ever cross paths at a conference or something you can bet the farm I’ll have them with me.  But hopefully not on.  I do really try to wear jeans in public.  Keyword in that sentence…try.

Baked Chocolate Doughnuts for Groundhog’s Day

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 6 doughnuts

Ingredients

  • 1 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoon melted butter
  • 1 teaspoon vanilla
  • powdered sugar for dusting
  • For the Groundhogs
  • 6 Nutter Butter cookies
  • 1 small tootsie roll, sliced into thin rounds
  • Nutella, peanut butter, or chocolate frosting
  • 12 mini chocolate chips
  • sliced almonds

Instructions

  1. Preheat oven to 325° and spray a 6 cavity doughnut pan with non stick cooking spray.
  2. In a large bowl sift together the flour, cocoa powder, baking soda, and salt.
  3. Add the milk and brown sugar. Stir until combined. Add the egg, melted butter and vanilla. Continue to stir until it is all incorporated.
  4. Scoop the batter into a resealable plastic bag. Snip a corner off and pipe the batter into each doughnut cavity in the pan.
  5. Bake for 13-15 minutes. Turn out onto a cooling rack and meanwhile put assemble the groundhogs.
  6. Assembling the groundhogs
  7. Separate the cookies of the Nutter Butter. Place two tootsie roll slices at the top of one of the cookies on the side that is frosted. Sandwich the cookies back together, pressing gently to seal. The tootsie rolls should be clearly visible and appear to be the groundhog's ears.
  8. Take a small amount of Nutella or frosting and "paint" on a nose.
  9. Using that same frosting or gel frosting in a squeezable tube, glue on two mini chocolate chips for the eyes and an almond slice just below the nose to represent the groundhog's teeth.
  10. Once doughnuts are cooled, sprinkle with powdered sugar, and place the groundhog in the middle of the doughnut as if peeking through is burrow.
