This little squirt’s birthday was yesterday.
What a ham…right!?
We had quite an adventure getting him here {you can read about that funny story here} and I couldn’t be happier to be his mom.
He’s a pretty adventurous eater but he does hold a soft spot for ketchup. He has even been known to dip fruit, pasta, or anything not nailed down on his plate into it. Fortunately, for those with weak stomachs at the table, watching him dip these zucchini fries into it was not at all bothersome.
And he did it over and over again. He just couldn’t get enough of them!
With zucchini in our garden ever plentiful I’m happy to serve these fries alongside any dinner.
Ingredients
- 1 medium zucchini
- 1 egg
- 1 tablespoon water
- 1 cup bread crumbs or panko
- 1 teaspoon garlic salt
Instructions
- Preheat oven to 425°. Line a baking sheet with parchment paper.
- Quarter the zucchini, remove seeds, and slice into strips.
- In a bowl beat the egg and water. In another bowl mix together the bread crumbs and garlic salt.
- Dip the zucchini strips into the egg then coat with bread crumbs. Place on the baking sheet and repeat until they are all done.
- Bake 8-10 minutes.

I loooove zucchini fries. Yes, I do. If our blasted zucchini had been good tonight, we were going to make these. It was bad. Yellow inside. Hard. Gross. STUPID

What a great use for zucchini! I love the stuff but after a while I get bored with the same dishes. I can’t wait to give this a try!
