When I am out grocery shopping I always have a list but there are times when the price of an item catches my eye. When I was shopping the other day I noticed a package of 6 whole wheat pitas priced at $1…awesome! I picked up a bag and took it home knowing I would figure out something to do with them.
They sat in my fridge for about a week. Every time I looked at them I had dreams and aspirations of whipping up a veggie wrap or hummus but never could get around to it. I also knew with my busy schedule and job to feed my family it needed to be something a bit more traditional. It had been awhile since we made homemade pizzas and I knew the pitas would make a great crust. We love to get creative with pizza and one of our favorites is BBQ chicken. The tangy bbq sauce, the sweetness of the red peppers, and melted saltiness of the mozzarella is a perfect combination!
BBQ Chicken Pita Pizzas
- 6 whole wheat pitas
- 12 tblsp barbecue sauce
- 3 cups mozzarella cheese, grated
- 1 large chicken breast, seasoned with salt and pepper and chipotle chile pepper, cooked
- 1 red bell pepper, sliced
- 1 medium onion, sliced
Preheat oven to 375 degrees. Lay out the pittas and top each one with 2 tblsp of your favorite BBQ sauce. Sprinkle with a little cheese and top each pita with chicken, red peppers, and onion. Sprinkle with some additional cheese and oregano. Place on baking sheets and bake in the oven for 15 minutes until the cheese is melted and the pita is crisp.
