Blackened Chicken with Avocado Citrus Salsa

I simply do not have time to think about dinner lately.

Ever since the middle of January my life has been utter chaos.  Organized chaos but chaos none the less.

It was evident when I was chatting with a very good friend the other day, she paused, and said, “Is that backwards?”

“Is what backwards?”

“Your sweater?  I think it’s inside out”

Within seconds of looking down  I discovered that indeed my sweater was on inside out.  And I had just come from helping in my sons class.  All.  Morning.  Long.

Oh joy.

No.  I’m not crazy.  *twitch twitch*

I’m just testing how much caffeine is required to keep oneself awake for as long as humanly possible so they can get done as much as humanly possible in a short span of 24 hours.

Someone get me those caffeine patches on Meet the Robinson’s so I can stay awake for days.  I already have random fits of uncontrollable screaming…what side effects?

Anywho…since I’m so wrapped up in my experiment {which is completely fake by the way} and the simple task of getting myself dressed in the morning is apparently too difficult simple dinners are good.

And entirely all too necessary at this point.

Enter Blackened Chicken.

Chicken, meet spices.

Spices, meet chicken.

See.  They love each other already.

Blackened Chicken with Avocado Citrus Salsa

Yield: Serves 4

Ingredients

  • 4 chicken breasts
  • spice rub mixture {recipe below}
  • 1-2 tsp cooking oil
  • 2 ripe avocados
  • 1 - 8 oz can mandarin oranges
  • 2-3 fresh tangerines or cuties
  • 1 tblsp lemon juice
  • salt and pepper

Instructions

  1. Preheat the oil in a large skillet over medium-high heat.
  2. Rub each chicken breast with some of the spice rub mixture. It is spicy so go easy at first.
  3. Cook each chicken breast for a few minutes on each side or until cooked through.
  4. While the chicken is cooking dice the avocado and place it in a medium bowl.
  5. Drain the oranges, reserving a tablespoon or two of the juice. Pour the remaining juice and oranges into the bowl with the avocado. Peel and separate the tangerine segments and add to the bowl. Add the lemon juice and salt and pepper. Gently toss to coat and set aside.
  6. Once the chicken is done slice it, serve it with rice and top it with the avocado citrus salsa.

Cajun Spice Rub

Ingredients

  • 2 1/2 tblsp paprika
  • 2 tblsp garlic powder
  • 1 tblsp salt
  • 1 tblsp onion powder
  • 1 tblsp dried thyme
  • 1 tblsp ground red pepper, cayenne
  • 1 tblsp ground black pepper

Instructions

  1. Combine all the of the ingredients and store in an airtight container. This should last for quite awhile so it's very budget friendly.

    Dinner has been problematic for me too. Although somehow I had made more time for breakfasts other than cereal. This chicken looks so good though!

      Thanks Erin! I am a total breakfast person too! The end of the day rolls around and I am just done. Now, if dinner were at the beginning of the day that would be easier.

      Thank you Jessy! I love making my own spice rubs. Mr actually won a set of really nice spice racks two years in a row at a golf tournament when we first got married so we started off with lots I could experiment with.
