The hills are alive with the sound of…sneezing?  Ahhahahahhhhhh.

Oh wait, wrong Julie Andrews movie.  ”Just a spoonful of sugar helps the medicine go down…the medicine go down, the medicine go down.”

“I’ve got a lovely bunch of coconuts, deedledeedee, there they are all standing in a row, bumbumbum…”

And that, my friends, is just a snippet of the beautiful musical musings of yours truly lately.  Sneezing?  Spring is in the air…everywhere you look around.  I seriously need to stop singing.  A spoonful of sugar would be nice to get the medicine to go down and in our house that means a cookie or some sort of candy these days.  The coconuts?  Well, I just had that stuck in my head so why don’t you join me.  All together now!

As you may have gathered by the rambling nonsense you just experienced things have yet to slow down and we are suffering from nearly every sort of germ or virus currently plaguing the county.  I do, however, have the perfect medicine for such a quandary.  Eggs and bacon.  In one lovely little stackable salad.

Let’s face it…bacon cures all and paired with a lovely golden, runny, yolk?  I’m getting excited just thinking about it.  Swoon city.

So, not only has it been swoon city in our house with all this bacon laying around but sick central…still.  Mama needed a fast, filling and comforting meal.  Nothing fills me up faster than protein.  One great source of protein that is ready in minutes is eggs.  I always have some in the fridge for all of my emergency needs such as chocolate chip cookie cravings, breakfast for dinner in a flash, or a quick hard boiled snack on the run.

Since I’m a runny yolk kinda gal I love having Safest Choice Eggs in my fridge for those times when over hard just ain’t gonna cut it.  Safest Choice Eggs go through an all natural egg pasteurization process which eliminates the risk of Salmonella in eggs before they even enter your kitchen.  Not only can you suck up those yolks runny but nibble all the cookie dough you want.

Yield: serves 1

Ingredients

  • 2 slices bacon, cooked
  • 1 egg, fried
  • 1 cup mixed green salad
  • 1 slice tomato
  • 2 slices avocado

Instructions

  1. Cook as many slices of bacon as needed for the number of servings.
  2. Fry an egg for each person according to their desire.
  3. Assemble the salad by placing the greens on a plate, top with a slice of tomato, 2 slices of bacon, avocado, and top with the fried egg.
  4. Season with salt and pepper then serve.
