Blue Cheese and Pear Bagel Fruit Pizza

You are probably not going to believe this but some of my best ideas come when I’m showering.  TMI?  I think I’m just relaxed, usually there aren’t kids bothering me, and I have time to actually think.  Of course, once I get out I’m usually feverishly writing on any scrap of paper I can find so I don’t forget anything.

Other times inspiration can come just from exploring the aisles at the grocery store.  It’s not often I do that considering the fact that I usually have at least two kids with me at the store but sometimes I get lucky.

Like the other day, for example.  As soon as I walked in I saw they had a package of bagel thins for $0.99.  Sold.  Upon further exploring they had pears on sale.  Triple sold.  Blue Cheese crumbles go great with pears.  Perhaps a new fruit pizza recipe?  Why not.

This fabulous little combo comes in at just over 400 calories landing it in my 400 calorie fix category and I’m excited to introduce “Five Ingredient Fix”.  Recipes with five ingredients.  Granted, this recipe had six but do herbs and spices really count!?  I haven’t decided yet but I can tell you salt and pepper definitely does not count as an ingredient when cooking.  It’s an essential.  Much like lunch.

Blue Cheese and Pear Bagel Crisp

  • 4 skinny bagel or bagel thin
  • 3-4 tablespoons butter
  • 1 pear, ripe
  • 8 tablespoons crumbled blue cheese
  • 1 teaspoon dried thyme
  • honey for drizzling

  1. Preheat oven to 425°.
  2. Separate the bagel thins and place, sliced side up, on a baking sheet.
  3. Spread each half with a small amount of butter.
  4. Clean and cut the pear in half. Slice thinly. Place about 4 slices on each bagel half.
  5. Sprinkle each bagel half with a tablespoon of blue cheese and sprinkle with a 1/4 teaspoon of thyme. Season with salt and pepper.
  6. Bake for 5-8 minutes or until the cheese is melted and bagel thins are toasted.
  7. Drizzle lightly with honey and serve immediately.

  1. These look great, I love pears with blue cheese!

  2. What a fun easy recipe – those bagel thins are great, especially when toasted. Wish we could come up with all of our recipe ideas in the shower! Maybe we should take one…we are a little “stinky” ;)

Bwahahaha! Yes, showers do a world of good. Not only for inspiration but people seem to enjoy being around you more. I don’t get it. As far as stinky cheese…the stinkier the better!
