I think I’m back.  It seems as though when I start to feel I’m back to normal something happens to pull me back over the “my life is crazier than normal” side of things.

This weekend I spent time in isolation after getting a positive result on a strep test.  I haven’t been that bored in a looooooong time.  And there are days when I would pay to be bored.  I’ll have to look back on this past weekend and remember that boredom is not the same as relaxation and rest.

I think I’m ready for this week.  Last week was the first full week of commuting with the kids to school.  It seemed to go well with the help of some amazing friends who let me hang out at their house during the day.  I’ve never had to live out my car before and don’t ever want to live in a van…down by the river.  Ever.  Finding a bathroom is very difficult.

Chicken Rice Broccoli Bake

Since I am commuting and practically living in my 4 door sport utility vehicle {doesn’t quite have the same ring as van} it leaves very little time for dinner.  On nights when I have more time to prepare dinner I find myself making extra.  For this Broccoli, Chicken and Rice Bake I make sure I have extra rice and cooked chicken on hand.  It makes for a very quick 30 minute meal.

Chicken Rice Broccoli Bake

Yield: serves a family of 6

Ingredients

  • 2 cups cooked rice
  • 2 chicken breasts, cooked and cubed
  • 2 cups broccoli, cooked
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 tablespoon lemon juice
  • salt and pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°
  2. In a bowl mix the soup, sour cream, and lemon juice until combined.
  3. Add the rice, chicken, and broccoli. Mix until combined. Season with salt and pepper to taste and pour into an 8 x 8 baking dish.
  4. Top with cheese and baked until warmed through and the cheese is melted.
  5. Serve with a side salad.

Notes

I love to make this meal using leftover rice and chicken. It makes for a quick meal. If you cook the broccoli and add to the sauce mixture hot mixing it will be easier.
