I’m a mom but let’s pretend that I’m not for one second. Just humor me.
Let’s pretend that I don’t walk around everyday with at least one form of food stuck to my shirt from something spilled, thrown, or wiped on me. Let’s pretend that these dark circles under my eyes are from partying all night instead of staying up with a sick kid. Let’s pretend…just for a second…that the reason I haven’t showered in two days is because the plumbing in my shower is broken.
Now I wouldn’t trade my kids for all the tea in China {I don’t even drink tea but you get the idea} but there are times when Mommy needs a timeout. This was my timeout the other day.
Since I’m the only person in my family who is a fan of brussels sprouts this was MY food. I didn’t have to revert back to elementary school and pre-lick it so no one else would touch it. Just adding brussels sprouts will do it. Which reminds me, I need to buy some more.
I don’t understand people not liking brussels sprouts. Except for the fact that I have to remind myself how to spell it and spell check always underlines it because it’s not capitalized I don’t see the problem.
If you are like so many people who don’t like them just give this pizza a shot. There is only one per pizza and that hardly even counts.
Ingredients
- Pizza Dough
- 1 tblsp butter
- 1/2 tsp minced or finely chopped garlic
- 1/4 cup red grapes, halved
- 2 brussels sprouts
- 2 tblsp feta cheese
Instructions
- Preheat oven to 425°. Sprinkle a baking sheet with cornmeal and roll out the pizza dough into 2 personal size pizzas.
- Melt the butter in the microwave and stir in the garlic. Spread a spoonful onto each crust.
- Rinse the brussels sprouts and cut off the stem. Gently remove the leaves and place on the pizza dough.
- Top each pizza with a small handful of grapes and sprinkle with the cheese.
- Place in the oven and bake for 15-18 minutes.

I love brussels sprouts but my husband…not so much. But I have a great idea for some for Tgiving and he’s just going to have to live with me for making them as a side dish! Your pizza looks great.
