Buffalo Chicken Tacos with Celery Slaw

Remember a week or so back when I said my slow cooker and I are BFF’s?

We are.  And we are inseparable.

With my brains and her muscle dinner is done before you know it.  Which is a very good thing right now.

Yesterday I worked.  ALL.  DAY.

I ate…nothing.  No.  I take that back.  I had a leftover bean burrito.  And lots of diet coke.

Breakfast of champions.

I’ve been “working” on a little project for the past few months and it is all starting to come to a head.  {I’ll be sharing more about that next week.  Guaranteed.}

While I’m thrilled and excited about this new project it also means more time spent working and less time worrying about dinner.  And sleeping.  I like sleep.  I miss it.

I can’t really do anything about the lack of sleep at this point but dinner, that’s one stress I can tackle.  With my crock pot.  Good thing since I was STARVING by the time dinner rolled around.

Toss a few chicken breasts in there, some buffalo marinade, and let your muscle do all the work while you…ummm, take a nap.

Buffalo Chicken Tacos with Celery Slaw

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 bottle buffalo marinade, I used KC Masterpiece
  • corn tortillas
  • Celery Slaw
  • 2 stalks celery
  • 1/2 cup shredded red cabbage
  • 1/4 cup buttermilk
  • 1/4 cup mayonnaise
  • 1/2 tsp sugar
  • 2 tblsp blue cheese
  • salt and pepper

Instructions

  1. Place chicken breasts and marinade in your slow cooker set on low. Cook for 8 hours. Shred chicken before serving.
  2. Celery Slaw
  3. In a medium bowl or dressing shaker mix the buttermilk, mayonnaise, and sugar. Add the blue cheese and mash with a fork to combine. Refrigerate.
  4. Slice the celery into thin pieces. Combine with the cabbage in a medium bowl. Pour dressing over the mixture and toss until coated. Season with salt and pepper.
  5. Serve with the buffalo chicken and corn tortillas.

      Thanks Christina! It made such a big batch that I froze half for later. Looks like Superbowl Sunday is covered over here. Love it when that happens!

    Today must be the day of the buffalo! I posted a buffalo chicken recipe, and yours is the third other buffalo chicken recipe I’ve seen posted today. It’s definitely a good thing – and so are these tacos!!

    Because we have different taste in this family… this is how I’m doing these. I cooked and shredded the chicken. Each person can decided which hot sauce and how much for their taco. I got broccoli slaw because it’s a big crunch… chopped it up a bit more. I chopped up celery to add to it. Then I have blue cheese and ranch dressing for people to choose from. I figured this way we all can be happy and have it set out like a taco bar.

      What a great idea Tammy! We all have different tastes in our home too. This is the perfect way for everyone to get exactly what they want without turning you in to a short order cook!
