I grew up with elementary school teachers in the house.  I betcha didn’t know that.  Cuz how could you unless you were a crazy stalker person checking up on my background.  Awkward.

You’ve heard the saying everything you need to know you learned in kindergarten right?  Well, my mom taught kindergarten and you could count on two things every September.  One, after a summer of talking like a normal adult she would inevitably start talking to each of us as if we were the ripe old age of 5.  Things like, “Did you have a good a day at school? Did you color a pretty picture, huh?” {in the sappiest baby voice you could recreate}  And my sister and I would be like, Mom, we’re in high school.

Two, September is for apples.  It seems logical enough.  It’s the start of Fall and many apples are reaching their prime.  Plus, the whole school thing and apples kinda go hand in hand.  And so it was.  Baby talk and apples.  I do slightly miss those days but not enough to give up the chance to be an adult and be able to make these Caramel Apple Walnut Bars to kick off the Fall right.  There’s something to be said for being old enough to work the oven.

I can think of no greater dessert for the start of Fall than these bars served fresh from the oven and topped with a scoop of ice cream.

Ingredients

    Crust
  • 1 3/4 cups all purpose flour
  • 1 cup old fashioned oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, cold
  • Filling
  • 5-6 apples, Granny Smith recommended for their tartness
  • 1/2 lemon or lime, squeezed
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • Caramel
  • 1 - 14 oz can sweetened condensed milk
  • 4 oz butter
  • 1/2 cup brown sugar
  • Crumb topping
  • 1 cup chopped walnuts
  • 1 cup reserved crumb mixture from the crust

Instructions

  1. Preheat oven to 375°
  2. In a large bowl mix the flour, oats, brown sugar, baking soda, and salt. Cut in the butter using a food processor or potato masher until it is crumbly.
  3. Reserve 1 cup of the mixture for the crumb topping. Press the remaining mixture into a 13x9 baking dish.
  4. Bake for 15 minutes or until slightly golden.
  5. While the crust bakes, peel and slice the apples and mix them with the lemon or lime juice, sugar, and cinnamon in a large bowl.
  6. Once the crust is slightly cooled spread the apples around on top of it and set aside.
  7. Caramel Sauce
  8. In a small saucepan melt butter and add the brown sugar. Cook over medium heat until the brown sugar is dissolved. Add the sweetened condensed milk and warm through.
  9. Pour over the apples. Sprinkle with the remaining crumb mixture and the walnuts.
  10. Bake another 20 minutes. Serve warm with whipped cream or ice cream.

  1. Hahhah my mom was an elementary school teacher too and she would ALWAYS talk to us as if we were babies. My sister and I would just roll our eyes and know October (that’s when our schools started in Africa) is here. I love this introduction to Fall. No better way to start using up the apples I am accumulating. Also…in total stalkish mode…I love these pictures even more after seeing the behind the scenes on IG.
