After years of wanting an ice cream maker I finally have one.
Seriously folks. Put this on your wedding registry. Heck, put it on your baby registry if you have to. Babies turn into kids and kids like ice cream. It works.
And my kids went crazy for this {take a deep breath} Caramel Ripple Oreo Chunk Mint Ice Cream {and exhale} just like I knew they would. It’s based off of one of our favorite desserts at a local restaurant, Asphalt Pie. I swear we are like hogs in a trough shoving for a spot to dig our spoons in, shoveling in bite after sweet bite of that stuff. It’s not pretty.
So when I was invited to participate in today’s Labor Day Ice Cream Social it was a no brainer to create an ice cream I already knew we loved and, most importantly, could have our own serving. No more shoving. Okay, maybe there was a little but I tried to behave myself.
Do yourself a favor and enjoy these last few days of summer with this indulgent treat…and try to keep the shoving to a minimum.

Ingredients
- 3 cups heavy cream
- 3/4 cup granulated sugar
- pinch of salt
- 2 cups mint leaves, packed
- 1/2 cup homemade or store bough caramel sauce
- 10-15 Oreo Cookies, cut into pieces
Instructions
- Pour 2 cups of cream in a saucepan and add the sugar and the salt. Warm over medium heat, stirring frequently, until the sugar is dissolved. Remove from the heat and add the mint leaves making sure they are completely covered by liquid. Cover and allow to steep for an hour.
- Strain the mint infused cream through a mesh strainer pressing on the mint leaves. Discard the mint leaves and add the remaining cup of cream. Chill in the fridge then freeze it in your ice cream maker, according to the instructions.
- Once churned fold in the crushed Oreo cookies and caramel sauce. Freeze completely before serving.
