I’m not sure I can remember a winter in Utah that has been as cold as this one. That’s what I’m blaming my laziness on at least. By the end of the day my energy is sapped and my flannel pj’s are looking more and more inviting with each passing second.
During times like these I reach for tried and true recipes, the more versatile and family friendly the better. When I found this recipe for Chicken Chili with White Beans I knew it would fit our budget, lifestyle, and our tastes.
I love chili recipes for their versatility. You can whip them up in minutes or allow them to simmer in a slow cooker while you are away at work. The same goes for this recipe. Whether you are looking for a quick 30 minute meal or planning to prep dinner in the morning, this Chicken Chili is it!
Make sure you head over to Campbell’s Kitchen for more recipes! I also have a little treat in the form of a video today. I’m still playing around with video. A few things I’ve discovered…one, I talk. A lot. Two, if you have never edited a video in iMovie don’t because once you don’t have access to iMovie you will be heartbroken. Three, I really enjoy making videos and with practice will get better…thank goodness.

Also, the chili looks amazing.

I can’t wait to try this out
Definitely a dish for the cold! Thankfully here in So Cal it’s heating up but it was cold too!!
It had been freakishly warm this winter here in Georgia which is a bummer because I love any good excuse to have soup!
Oooo send some of the heat over here Jen! Utah has been freezing! Maybe crank up the AC, throw on a winter coat, and fake it!
We definitely need soup, stew and chili to keep ourselves warm, and this looks like it would hit the spot!
I love a good soup like this one. Definitely perfect for this cold weather!!
