Chili Cheese Chicken Fingers {30 Minute Monday}

Remember this snack post when I mentioned my kids won’t eat carrot sticks in their lunch?  Well, they do eat chips.  But only certain chips.

I buy those variety packs at Sam’s Club and without fail the BBQ chips are gone first.  Even mr will take a PB&J sandwich to work just so he can have those chips.  Next go the Doritos, then the Sun Chips, then the Cheetos.  Until all that is left is the Chili Cheese Fritos.  So what am I supposed to do with 10 bags of chips!?

I’m not even a big fan of them but they come in the variety pack so we are kinda stuck with them.  But the other day I got to thinking they would make some killer chicken fingers.

I just love it when I’m right.  It’s not as often as I’d like but I have my moments.

Serve with a side of fresh fruit {grapes are pretty inexpensive right now} and you’ve got dinner in less than 30 minutes!

Chili Cheese Chicken Fingers

Yield: serves 6

Chili Cheese Chicken Fingers

Ingredients

  • 2 large chicken breasts, cut into strips
  • 10 - 6 oz bags of Chili Cheese Fritos
  • 1 large egg
  • 2 tablespoons milk
  • 1/2 cup flour

Instructions

  1. Preheat oven to 425°.
  2. Begin by pouring all of the chips into a food processor. Turn it on for about 20 seconds to crush the chips. If you do not have a food processor you can pour them into a sealable baggie and let the kids have at it for a bit. Pour the chips into a shallow bowl.
  3. In another shallow bowl beat the egg and milk until combined.
  4. Pour the flour into yet another shallow bowl.
  5. Create an assembly line starting with the flour, next the eggs, and finally the chips. Dredge a chicken strip in the flour, dip it into the egg mixture making sure to coat the entire piece, then place in the crushed chips and coat all over. Place on a baking sheet. Repeat until all of the strips are done.
  6. Bake for 12-14 minutes depending on the size of the strips. Mine were about 1" thick.
  7. Serve with fruit.

Notes

I was able to get 15 large strips from my two chicken breasts and was easily able to serve my entire family. Adjust the recipe according to your needs.
