Chocolate Animal Crackers {Alphabet Summer Letter C}

Chocolate, cheese, cookies, crackers, cars, campfire.

Did you notice all those words started with the letter c?  I’m sure you did…you are so smart.  It just so happens to be “C” week during our Alphabet Summer Series and I have seen my share of each one the things mentioned above during the last couple of days.

We just got back from “camping” in a beautiful cabin at Bear Lake known as the Caribbean of the Rockies.  How’s that for a cool vacation!?  And, while I’d like to say I totally planned “c week” all around our vacation, I have to be honest and say I just got lucky.

Lucky or not, I could go for some more vacation.  But alas, all good things must come to an end but the “C” celebration doesn’t have to!

And now that we don’t have Grandma or Grandpa or cousins or aunts or uncles to entertain our children while we lay back in a lounge chair to veg it’s up to me.  Again.

Cookies, or crackers as the case may be, are always a surefire way to beat the post vacation blues.  Even for Mommy.

Chocolate Animal Crackers

Prep Time: 8 minutes

Cook Time: 12 minutes

Total Time: 50 minutes

Ingredients

  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg yolk
  • 1/4 cup cocoa powder
  • 1 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups all purpose flour

Instructions

  1. In a medium bowl cream the butter and sugar. Add the egg yolk and stir until combined.
  2. In a small bowl sift together the cocoa powder, cinnamon, salt, and flour.
  3. Gradually add the flour mixture to the butter mixture and beat until it forms a smooth dough.
  4. Wrap with plastic wrap and chill for 30 minutes.
  5. Preheat oven to 350°.
  6. Remove dough from the refrigerator and on a floured surface roll the dough out to 1/4" thick.
  7. Use cookie cutters to cut out animals or shapes. Bake on a cookie sheet for 12 minutes.
  8. Allow to cool completely and decorate or eat plain.
