You need more dessert in your life.
I decided at the last minute to make these.
Most of the time I plan out my recipes and have all the ingredients on hand. Okay, there was that one time I didn’t have what I needed.
This time I needed to head to the store to get some peppermint extract so after the boys were done with wrestling yesterday I dropped them off at home with Mr. I was definitely not passing up this chance to shop alone.
Apparently not. Dang. And everyone else in a 20 mile radius wanted the same thing. They got there first. Dang.
Next time I’ll be more prepared. Maybe.
I prepared the filling with vanilla extract since I had no choice. They were still irresistible.
Ingredients
- 1 box Devil's Food Cake Mix
- 3 eggs
- 1/2 cup canola oil
- 1/2 cup water
- 1 - 7 oz jar marshmallow creme
- 1/2 cup butter, softened
- 1 1/4 cup powdered sugar
- 1/2 tsp peppermint extract
- crushed candy canes for sprinkling
Instructions
- Preheat oven to 400°. Line a baking sheet with parchment paper.
- In a medium bowl mix the cake mix, eggs, water, and oil until fully incorporated.
- Drop the mix by the tablespoon onto the parchment layered baking sheet about 2" apart. Sprinkle half with a pieces of crushed candy canes.
- Bake for 10-12 minutes.
- In a medium bowl cream the butter and marshmallow creme.
- Add the extract and powdered sugar. Mix until fluffy.
- Place a heaping tablespoonful onto the flat side of one cookie and top with another.

Oh my husband would love these! I made Pumpkin whoopie pies at Thanksgiving, this would be great to add to my repertoire of whoopie pie recipes!
