Chocolate Peppermint Whoopie Pies

You need more dessert in your life.

I decided at the last minute to make these.

Most of the time I plan out my recipes and have all the ingredients on hand.  Okay, there was that one time I didn’t have what I needed.

This time I needed to head to the store to get some peppermint extract so after the boys were done with wrestling yesterday I dropped them off at home with Mr.  I was definitely not passing up this chance to shop alone.

I only had a few things on my list.  I left the store with more than that.  Of course.  The only thing I didn’t get {the whole reason I went shopping} was peppermint extract.

Don’t they know I wait until the last possible second to buy something I’m out of!?

Apparently not.  Dang.  And everyone else in a 20 mile radius wanted the same thing.  They got there first.  Dang.

Next time I’ll be more prepared.  Maybe.

I prepared the filling with vanilla extract since I had no choice.  They were still irresistible.

Chocolate Peppermint Whoopie Pies

Yield: Makes about 16 sandwiches

Ingredients

  • 1 box Devil's Food Cake Mix
  • 3 eggs
  • 1/2 cup canola oil
  • 1/2 cup water
  • Peppermint Marshmallow Creme Filling
  • 1 - 7 oz jar marshmallow creme
  • 1/2 cup butter, softened
  • 1 1/4 cup powdered sugar
  • 1/2 tsp peppermint extract
  • crushed candy canes for sprinkling

Instructions

  1. Preheat oven to 400°. Line a baking sheet with parchment paper.
  2. In a medium bowl mix the cake mix, eggs, water, and oil until fully incorporated.
  3. Drop the mix by the tablespoon onto the parchment layered baking sheet about 2" apart. Sprinkle half with a pieces of crushed candy canes.
  4. Bake for 10-12 minutes.
  5. To make the Marshmallow Creme Filling
  6. In a medium bowl cream the butter and marshmallow creme.
  7. Add the extract and powdered sugar. Mix until fluffy.
  8. Place a heaping tablespoonful onto the flat side of one cookie and top with another.
