I’d like to think I’m a rather giving person.  Except when it comes to sharing my cheesecake.  Or Diet Coke.  Or chocolate.  And, on occasion, the warm down comforter on my bed.  Golly gee Beave that list sure is long.  And terribly lacking in veggies if I do say so myself.

Despite my *ahem* few weaknesses I do actually love to share and when I get an opportunity to share my food I very willingly oblige.  Lately my skills in the kitchen have succumbed to illness, moving, and a sudden urge to play Candy Crush every waking moment of every day to escape the utter disarray that is my in laws basement until we move all our “stuff” into our new home.  Whew.

Crispy Oatmeal Cookie Sandwiches

I do get moments now and again to get my swagger on.  These bite size Crisp Oatmeal Cookie Sandwiches were a fun collaboration between my mother in law and I.  She loves Nutella on apples cuz, let’s face it, who wouldn’t!?  That’s where I got the inspiration to add grated apples to the cookie dough.  I shared the first nibble with her and, needless to say, grabbed a few for me as well.

Crisp Oatmeal Cookie Sandwiches

Crisp Oatmeal Cookie Sandwiches

Ingredients

  • 2 cups all purpose flour
  • 2 cups rolled oats, finely ground
  • 1 teaspoon baking soda
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1/2 cup canola oil
  • 1 apple, grated
  • 3 egg whites
  • Nutella, for filling

Instructions

  1. Preheat oven to 375° and line a baking sheet with parchment paper.
  2. In a medium bowl mix flour, ground oats, baking soda, sugar and brown sugar until combined. Add the oil and apple and mix until incorporated.
  3. In a separate bowl whip the egg whites until stiff. Gently fold into the cookie dough.
  4. Scoop teaspoon size balls of dough onto the baking sheet. Bake for 8-10 minutes.
  5. Allow to cool then spoon a bit of Nutella onto the flat side of half of the cookies. Top with the other half creating a sandwich.
