Hellooooo gorgeous!
That right there is caramel popcorn and that stuff I’m drizzling on it…Ghirardelli Dark Chocolate. Oh, but not just any dark chocolate. It is their Intense Dark Twilight Delight 72% Cacao. Dark. Chocolate. Heaven.
I am kinda a sucker for sweet and salty snacks. Popcorn is my ultimate weakness as you can read here. Cover it with something sweet and you’ve got a killer movie night snack.
The caramel popcorn and the dark chocolate make a great combination but to add a bit more sweetness to the mix I added a few marshmallows so that every once in a while you get a soft, sugary bite. Since the dark chocolate is much less sweet then a semi-sweet or milk chocolate it doesn’t “make your teeth hurt” from all the sugar!
Dark Chocolate Drizzled Caramel Popcorn
- 8 cups freshly popped popcorn, salted
- 1/2 cup packed brown sugar
- 1/4 cup butter
- 3 tblsp light corn syrup
- 1/4 tsp baking soda
- 1 – 3.5 oz bar Ghirardelli Intense Dark 72% Cacao Twilight Delight
- 1 cup mini marshmallows
Preheat oven to 200°. Place the popcorn in a large bowl.
In a small saucepan melt the butter, brown sugar, and corn syrup. Heat over medium until bubbly around the edges, stirring occasionally. Continue cooking for 5 minutes without stirring. Remove from heat and stir in baking soda until it is foamy.
Pour the caramel over the popcorn and toss until evenly coated. Transfer it to an ungreased baking sheet (13 x 9). Bake for 1 hour, stirring every 15 minutes.
Finely chop the chocolate and place in a microwave save bowl. Microwave for 30 seconds at a time, stirring, until it is melted. Drizzle over the popcorn and toss in the marshmallows. Allow to cool until it is firm. I’m impatient so I transferred it back to the large bowl and stuck it in the fridge for a bit!

Oooh! My wife and I have made a number of varieties of popcorn, but have never tried this one. This looks great.
The popcorn looks yummy. I would add the dark chocolate along with a handful of raisins inmy brownies the next time I make them.

OF COURSE I follow you on facebook and twitter … and I’m a total popcorn and chocolate addict too! I sometimes just have a big bowl of popcorn for dinner. And you used my favorite dark chocolate on your popcorn. What would I make with the chocolate? Honestly, I’d probably just eat it. Or I’d make some coffee/chocolate ice cream. Did you see that lovely toffee chip coffee ice cream that Karie Engels posted the other day? Oh man. I gotta make that.
The sweet and salty crunch of this popcorn recipe is delightful in it’s sophisticated twist with the dark chocolate.
I’d make chocolate ganache-filled croissants for a special breakfast.

yum, I make caramel popcorn all of the time and this addition sounds delicious! I also have a big choco cake that I need to make and am going to melt chocolate down to make swirls…this stuff sounds good!
Ok I think I would make a hot lava cake and my husband would REALLY appreciate it since he is allergic to milk and semi sweet choc. (weird, I know…)and can really only handle dark chocolate. I might sneak some into his choc chip cookies too, and of course make your popcorn.=)
This popcorn is incredible! Before I read through the recipe I would have said that I would use the chocolate for a chocolate sorbet, but now I think I would try this popcorn. Probably a little healthier.
