Double Decker Ice Cream Sandwich + A Wilton Giveaway

The Fourth of July is one of the holidays I look most forward to, second only to Christmas.

If Santa came on the Fourth of July too than it would be neck and neck.

When I was growing up Independence Day was huge.  My Grandparents would throw a big party in their backyard and my uncle would plan a pyrotechnics show that would put Disneyland to shame.  He is like Jim Carrey’s twin only with fire.  Oh wait…he is Jim Carrey’s twin.

As always, there was plenty of food and a full day of swimming which meant I could eat as much of that food as humanly possible.  Good times.

Now a days there is far less swimming, the same amount of eating, and plenty of sparklers for the kids.  Woohoo for sparklers!  I might just love them as much as the kids.

You provide the sparklers and I’ll help you with the food, kinda.  Wilton is going to help because this year they want you have a Festive Fourth and with all of their crazy awesome bakeware it shouldn’t be too hard.  Everything I used to create these ice cream sandwiches {plus an extra tool or two} are part of a fun bundle Wilton is giving away to one of my lucky readers!

Double Decker Ice Cream Sandwich

Prep Time: 23 minutes

Cook Time: 12 minutes

Total Time: 1 hour, 45 minutes

Yield: Makes 10 ice cream sandwiches

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup canola oil
  • 1/2 cup buttermilk
  • 2 eggs, slightly beaten
  • 1 teaspoon vanilla
  • Filling
  • 1 quart strawberry ice cream
  • 2 cups whipped topping, thawed
  • 1/2 cup blueberry pie filling
  • 1 knife tip scrape of Wilton Sky Blue Food Coloring Paste, optional

Instructions

  1. Preheat oven to 325°
  2. In a medium bowl sift together the flour, sugar, brown sugar, and salt. Set aside.
  3. In a separate bowl mix the oil, buttermilk, eggs, and vanilla. Add the flour mixture and stir until combined with a wooden spoon.
  4. Spray your Wilton Ice Cream Sandwich Pan with cooking spray. Spoon about 2 tablespoons of batter into each cavity. Spread evenly.
  5. Bake for 10-12 minutes and turn out onto a cooling rack.
  6. Once completely cooled, spread a heaping spoonful of filling on one cookie and about 1/4 cup of softened ice cream on another. Stick together and immediately return to the freezer for an hour. Repeat until all the sandwiches are done. Wrap in plastic wrap until ready to eat.
  7. Filling
  8. The strawberry ice cream just needs to soften slightly before spooning onto the cookie. Fold the blueberry pie filling into the whipped topping and add the food coloring, if desired. Return to freezer until ready to assemble the ice cream sandwiches.

  3. I love that ice cream sandwich pan! I know my kids would go crazy for those ice cream sandwiches. Our favorite thing about the 4th is the neighborhood parade. There are people on bikes, horses, ATVs and motorcycles…each one decked out in full red, white and blue regalia.

  19. My favorite thing about the fourth of July is the Bristol Fourth of July Parade, the oldest in the country. We go every year! I’d love to make these ice cream sandwiches this summer, my kids would love them. Great post today!

  25. We’re twins for holidays! The 4th has always been my favorite – second to Christmas and then maybe New Years…. or Thanksgiving. That’s a tough one, third place. My favorite part has always been the fireworks but now I have my own lil firecracker… my oldest was born on the 4th so I guess she’s my favorite part ;)
