Homemade Enchilada Sauce

My husband speaks Spanish.  Fluently.  Did you know that?

Probably not since I never talk about it.  He learned it after living in Argentina for two years.  Now he travels the country being fed fabulous, authentic Hispanic food from the managers he meets with.  And he gets paid to do this.

Yeah.  It’s a tough life.

Of course I am sitting in California right now, sans kids, typing this.  And I spent all day yesterday shopping, eating, and having a merry time with my Mom and my sister.

I know, I know.  Tough life.

To be honest the last thing I’m thinking about is enchilada sauce, except for the fact that it is super yummy and awesome.  Right now I’m thinking about the fact that in two hours I will be in the mountains.  Without my computer.  Or wi-fi.

I’m secretly enjoying it but also freaking out.

I might actually have to…read.  A book.  *GASP*

I hope this weekend you all have as much fun as I will be having.  Celebrate Cinco de Mayo with a little flare, guacamole, and enchilada sauce {preferably with enchildadas}.

Homemade Enchilada Sauce

Prep Time: 2 minutes

Cook Time: 8 minutes

Total Time: 10 minutes

Yield: Approximately 3 cups

Ingredients

  • 2 – 8 oz cans tomato sauce
  • 1 – 4 oz can diced green chiles
  • ¾ cup water
  • 1 tblsp chili powder
  • ¼ tsp cumin
  • ¼ cup green bell pepper, finely chopped
  • 1 clove garlic, minced

Instructions

  1. Combine all of the ingredients in a pot. Cook over medium heat until boiling. Slowly boil for 5 minutes to combine the flavors then use it in your favorite dish.
  2. You can puree it with an immersion blender or stand blender but I prefer it a little chunky.

    I had a bad experience with homemade enchilada sauce awhile back, and have been scared to try it since then. But this looks so good, I may just have to get ove my fears!

    I think there is a chance my old man will forgive me for anything if I came out with a dish that looked like that!!! What is your favorite filling? I LOVE chicken in mine, but alas, he isn’t as big a fan.
