Jicama and Sweet Potato Slaw with Honey Lime Dressing

It’s time for me to spill my guts.

This jicama and sweet potato slaw is out of this world.  And summer is totally sending me to crazy town right now.

The house is in a constant state of disarray.  There is a never ending pile of laundry.  And to top it off mr and I are trying to make some life changing decisions all at once.  We must be nuts.

If I’ve seemed a bit distant on the blog {although I’m not sure if that’s possible on “paper”} that’s why.  I have been holding back.  Now isn’t the time to talk about my current struggle on whether to wear white after Labor Day and in a few weeks or months there might not be anything to share but, as my bestie would say, it is what it is.

Fast and simple recipes are a necessity right now.

And, while life may be a bit more stressful, it makes me appreciate the slow days a bit more.

I am certainly grateful to have this blog to vent on.  You guys are so good to listen.  If you just scrolled down to the bottom for the recipe don’t tell me…I’ll never know the difference.

And to show you just how much I love you tomorrow I’m bringing dessert.

Jicama and Sweet Potato Slaw with Honey Lime Dressing

Prep Time: 7 minutes

Total Time: 7 minutes

Yield: Serves 6

Ingredients

  • 1 tablespoon honey
  • juice from one lime
  • 1 clove garlic, minced
  • 1 jalapeno, finely chopped
  • 2 tablespoons canola oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 small sweet potato, peeled
  • 1 small jicama, peeled
  • handful of cilantro, chopped

Instructions

  1. In a medium bowl stir the honey, lime, garlic, jalapeno. Whisk in the oil and salt and pepper.
  2. Thinly slice the sweet potato and jicama into matchsticks. Place them in a medium bowl with the dressing and toss to coat. Fold in the chopped cilantro.
  3. Serve immediately or store in the fridge until ready to serve.

Serve this along with the Ka-Bam Kabobs for Father’s Day!  Dad will be so happy…trust me.

  4. Been feeling a bit “distant” and overwhelmed myself. Have hardly had time to cook which somehow leaves me feeling guilty. Beautiful recipe tho, right up my alley!

      Thank you ladies! I’m glad I’m not the only one feeling that way right now. Maybe it’s just the start of summer and shifting schedules and such. I think the slaw would pair perfectly with that Watermelonade! ;)
