Made with Love Week – Lemon Crème Brûlée with Berry Compote

It’s the last day of “Made with Love Week” here at Budget Gourmet Mom.  So far Kacey, from Stay At Home Artist, and I have shared 4 posts all in honor of Valentine’s Day and what better way to end it then with a romantic, decadent dessert! Valentine’s Day is, after all, a day dedicated to love and romance.  Whether you are celebrating with a special someone or enjoying an evening with friends this Lemon Crème Brûlée is the perfect addition to the menu.  Serve along side this adorable coupon book and you will definitely have a winner!

Despite what you may think it is relatively easy to make and you don’t need any special tools, such as a flame thrower which have been banned from my house for the next, oh let’s say, 18 years (boys and fire are, in my opinion, not a good combination).

Lemon Crème Brûlée with Berry Compote

Ingredients

  • 4 large egg yolks (save the whites for an omelette)
  • 3 tblsp granulated sugar
  • 2 cups heavy whipping cream
  • 1/2 tsp lemon extract
  • 1 tsp lemon zest
  • 1/4 cup brown sugar

Instructions

  1. Beat egg yolks in a medium bowl with an electric mixer on high for about 3 minutes or until thick and lemon colored. Gradually beat in the sugar. Set aside.
  2. In a pot heat the whipping cream over medium heat just until hot. Gradually stir in at least half of the heated cream mixture into the whipped yolks. Pour back into hot cream in the pot. Cook over low heat 5-8 minutes. Stir constantly until it thickens. Stir in lemon extract and zest.
  3. Pour custard into 4 6-oz ramekins. Allow to chill for at least 4 hours, cover with plastic wrap after they have cooled a bit. Set oven to broil.
  4. Sprinkle brown sugar evenly over custard. Broil with tops about 5 inches from heat for about 3 minutes or until sugar is melted and forms a glaze. Refrigerate 1-2 hours. Top with berry compote and serve.
  5. To make the berry compote simply heat 1 cup of frozen mixed berries with 2 tblsp sugar until thickened. Allow to cool before topping crème brûlée.
