Made with Love Week – Sweetheart Cupcakes

I love cupcakes!!! I think it’s because it seems so personal and perhaps a bit possessive…I’m still at the “2 year old” stage of “it’s mine”. I know when I get that cupcake in front of me I don’t have to share it. I get to enjoy every last bite and lick my fingers when I’m done. You are drooling aren’t you!? Good thing I’m sharing my next recipe then!

I call it a sweetheart cupcake. It’s a chocolate cupcake with cherry pie filling in the middle and cherry frosting delicately swirled on top. I dare you not to enjoy it!  In addition to this delectable cupcake Kacey, from Stay at Home Artist, has the perfect decoration to top it with!  Head on over there to print this adorable cupcake topper!

Sweetheart Cupcakes

Ingredients

  • 1 box of chocolate cake mix
  • Whatever ingredients listed on the cake box
  • Cherry Pie filling
  • Cherry Buttercream
  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • 3-4 tblsp water
  • 3 tsp maraschino cherry juice
  • Red food coloring, if desired
  • Maraschino cherries, to top cupcakes with

Instructions

  1. Preheat oven as directed on the box. Line a muffin tin with cupcake liners.
  2. Proceed to make the batter also as directed. Using an ice cream scoop fill each cup about 1/2 way full.
  3. Use a spoon or fork to scoop 1 cherry and "goo" (I'm sorry that doesn't sound more appetizing) into the middle of each cupcake. Bake. Allow to cool than pipe frosting onto each one...if you can wait!
  4. Frosting
  5. Cream butter, sugar, and water. Adjust accordingly adding more water or sugar. Add the juice and food coloring. Beat for 30 seconds. Place in a decorator bag with a star tip and squeeze a swirl on each cupcake. Top with a maraschino cherry.

Notes

Side note after the fact...I noticed that the pie filling had a tendency to sink to the bottom of the cupcake. I put some cocoa powder on top of the cupcake batter before dropping in the cherry pie filling and it helped. It won't alter the flavor or texture and will simply bake into the batter. Give it a try!
