We left sunny southern California and returned to Utah snow.
In fact, I think we brought the bad weather with us {and an endless supply of dirty laundry}. The last two days we were there were gloomy. I guess we figured we would bring a little souvenir home with us in the form of bad weather.
I also snuck a few souvenirs from my parents Meyer lemon tree.
Every girl should be so lucky.
If it were up to me the only souvenir that would have come with us were the lemons but you know the phrase, “when life gives you lemons…you make lemonade.”
Next best thing? Lemon bars. Or maybe better.
Yep. So much better.
Ingredients
- 1 cup butter
- 2 cups all purpose flour
- 1/2 cup powdered sugar
- 4 large eggs
- 2 cups granulated sugar
- 1/3 cup lemon juice (about 2 lemons)
- 1/4 cup all purpose flour
- 1/2 tsp baking powder
- additional powdered sugar for sprinkling
Instructions
- Preheat oven to 350°
- In a microwave safe bowl melt the butter.
- Add the flour and sugar and mix until a smooth dough. Press evenly in a 9 x 13 pan.
- Bake for 20-25 minutes until lightly browned.
- While baking make the lemon layer.
- In a medium bowl beat the eggs for 30 seconds.
- Stir in the sugar, lemon juice, flour, and baking powder. Mix until creamy.
- Pour over the hot crust and bake for another 20 minutes.
- Allow to cool and sprinkle with sifted powdered sugar. Cut and serve.

These look delicious! I have made lemon bars before but never with Meyer lemons. Definitely need to try this!

I know, right!? I so wish we had the climate for that. At least I can raid their tree when I visit!
Can you believe I’ve never made lemon bars before? I’ve always wanted to but I just never got around to it. I think I’ll start with this recipe.
Oh and when I get a house, the first thing I’ll have to do is to get a Meyer lemon tree
