It just so happens that my brother-in-laws birthday was yesterday. It also just so happens that corn dogs are pretty much his favorite thing on this planet {aside from my beautiful sister-in-law and their new baby}.
While the fact that his birthday was yesterday and the timing of this post was merely an after thought I’d like to think it’s fate. And he’ll never know that I didn’t do this on purpose. Because I did do this on purpose.
To amp up the nutritional value of this meal, the first time I made them I served baked sweet potato fries along with some cucumber salad.
They tasted great but didn’t come out of the muffin tin so well. You live, you learn. I thought I could maybe fake the pictures but after some review I knew I would have to make them again except with liners this time.
The second time around I used the liners but was out of sweet potatoes and cucumbers and that fabulous corn on the cob. Whatever. You can’t win’em all.
The good news is these are so easy to make that I’d be happy to make them again. Not only do the kids love them but I know my brother-in-law would too!
Ingredients
- 1/4 cup cornmeal
- 3/4 cup all purpose flour
- 1/3 cup granulated sugar
- 1/2 tablespoon baking powder
- 1/4 teaspoon salt
- 1 1/2 tablespoons butter, melted
- 3 tablespoon oil
- 1 large egg
- 1/2 + 2 tablespoon milk
- 1 small jalapeño, diced (optional)
- 3 hot dogs, whichever you prefer
Instructions
- Preheat oven to 350° and fill a mini muffin tin with liners.
- In a medium bowl sift together the cornmeal, flour, sugar, baking powder, baking soda, and salt. Create a little well in the middle.
- Place the butter, oil, egg, and milk in the middle of the well in the flour mixture. Beat into a batter until smooth. Fold in the jalapeños at this time if desired.
- Fill each muffin liner with 1 tablespoon of batter. Slice each hot dog in to 8 equal pieces and place one in each filled liner, gently pressing the hot dot into the batter.
- Bake for 12-15 minutes or until slightly golden.
- Serve with baked beans and sweet potato fries.

I hope they love them Becca! Yes, that is the measurement. I had to take a larger recipe and divide by half so that’s why it’s not exact.
