Mini Funfetti Cookie Sandwiches

I think of every life as a celebration.  It’s a celebration of good times, bad times, fun times, hard times, and of course food.

This month happens to be breast cancer awareness month and I’m sure everyone knows someone who has been affected by this disease or they, themselves have struggled with it.  I have family on both sides that have battled with breast cancer.  I have friends who are fighting it now.

And, while it is a somber and serious thing to think about, it takes a strong will and desire to kick cancer’s butt to win.

So, in honor of every woman (or man) who has ever fought breast cancer and won, for every woman (or man) who fought tirelessly but was defeated, and to every person on this earth who has been affected by breast cancer I stand with you to celebrate! 

Celebrate the people who have dedicated their lives to finding a cure for this disease.  Celebrate living to see another day after chemo.  Celebrate the mother whom you may have lost too soon.

Whatever your reason for celebration I think it’s important to take a moment and do it.  Plus, funfetti cookie sandwiches don’t hurt either…not that I need a reason to enjoy those.

Mini Funfetti Cookie Sandwiches

Yield: about 32 cookie sandwiches

Mini Funfetti Cookie Sandwiches


  • 1 - 18 oz box Funfetti Cake Mix
  • 2 large eggs
  • 1/4 cup oil
  • 1 1/2 cups strawberry yogurt


  1. Preheat oven to 375° and line a baking sheet with parchment paper.
  2. In a medium bowl mix the cake mix, eggs, and oil together until it resembles cookie dough. A wooden spoon works well to help make the dough come together.
  3. Spoon 1 teaspoon of dough onto the baking sheets at a time leaving 1" of a space in between each one.
  4. Bake for 8 minutes and allow to cool.
  5. While the cookies are baking spoon 1 teaspoon of yogurt onto another baking sheet or into a mini muffin tin that has been sprayed with nonstick cooking spray for easier removal. Freeze until firm, about 30 minutes, and place between two cookies.
