I have been so busy lately.
When summer rolls around aren’t things supposed to slow down? I guess that is one of the downfalls of being an adult. As a kid I remember my days being filled with nonsense and freedom…glorious freedom.
Nowadays I have a bit less freedom but I get to enjoy the nonsense of summer days through watching my children which, in it’s own way, is much more fulfilling. Enjoying a treat or two every
once in awhile day doesn’t hurt either!
One of my favorite flavor combinations is bananas and Nutella so I dreamed up my own twist on the classic chocolate dipped frozen banana.
Nutty Chocolate Dipped Frozen Banana Pops
- 4 popsicle sticks
- 2 whole bananas
- 4 tblsp Nutella
- 4 oz semi-sweet bakers chocolate squares
- 1/2 cup chopped walnuts, optional
Peel the bananas and cut in half. Take each half and slice in half again lengthwise. Lay the sliced bananas cut side up and gently press the popsicle stick onto one of the sides. Spoon a tablespoonful of Nutella on top of the banana with the stick and top with the other half of the banana. Repeat with the other 3 halves of banana. Place in the freezer for 30 minutes.
Once the bananas have chilled melt the chocolate and lay out the walnuts on a cutting board. Remove the bananas from the freezer and dip them in the melted chocolate. Immediately roll them in the nuts, if you choose to. Work quickly because the chocolate hardens quickly. Once all four banana pops are done chill for another few minutes just until all the chocolate is hardened. Enjoy immediately.
Side note: I suggest preparing and serving them immediately because the bananas can change texture in the freezer making them mushy. Plus, I allowed mine to freeze too long and they were hard as rocks which meant we had to wait to enjoy them. Torture!
