During the past few months we’ve had some big changes going on.  I’ve kept you up to speed about moving, buying a house, waiting 4 months (4 SOLID months for said house to close – no, it wasn’t a short sale or foreclosure), then moving in and getting settled.  What I didn’t share was the fact that my husband was looking to change jobs after 14 years with the same company.

As if the house situation wasn’t stressful enough we were adding a huge career game changer to the mix.  Thank goodness we weren’t adding a baby or pregnancy in with all of that or I may have gone a little wacko.  Ooops.  Too late.

Anyways, we had to wait to close on this new house before he could quit his corporate job to move on to our new adventure of building our own business.  It was, oddly enough, not a difficult decision.  It just felt right and, to this day, we both know we made the right decision.

Orange Chocolate Chip Cookies

I imagine you’ll be reading much more about our new business.  We’ve partnered with a company called doTERRA.  They specialize in essential oils and healthy living.  You’ll be seeing the products in my cooking occasionally and definitely throughout my stories as I’ve come to rely on them on a daily basis.

The best part about these essential oils is you can cook with them.  Seriously.  I am just giddy thinking about the different combinations of flavors I can create with a few drops.  This first recipe is a cookie.  It’s simple enough but has a citrus surprise in the batter.  1/4 teaspoon of the Wild Orange Essential Oil {price point will show retail cost} is all it takes to add a hint of orange.

Now, I don’t know if it makes these cookies healthier due to all the medicinal qualities in essential oils but I’d like to think so.

Orange Chocolate Chip Cookies

Prep Time: 11 minutes

Cook Time: 12 minutes

Total Time: 24 minutes

Yield: 3 dozen

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon Wild Orange Essential Oil
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/4 cups all purpose flour
  • 1 cup semi sweet chocolate chips
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°
  2. In a large bowl beat the butter, brown sugar, and granulated sugar until combined. Add the eggs, one at a time. Then add the vanilla and essential oil.
  3. In a separate bowl combine the baking soda, salt, and flour. Add to the butter and sugar mixture. Mix until combined.
  4. Fold in the chocolate chips.
  5. Chill for 5 minutes {for fluffier cookies} then scoop tablespoon size balls onto a baking sheet. Bake for 12 minutes or until slightly browned.
