These muffins are pretty healthy for you.
They are the kinda muffins that when you eat them you know you are eating something healthy. Now, that isn’t a bad thing because they still taste super yummy. I just won’t be eating these everyday.
Have I lost you already to sweet, fluffy doughnuts!? Don’t leave…you need something healthy every now and then. Come on, you can do it!
One of my favorite {healthy} flavor combinations is apple and peanut butter. Slice of apple + jar of peanut butter = one spoonful of happiness. When I was thinking about what would make a healthy and easy snack a peanut butter and apple muffin kinda made sense. You can make them ahead of time and the apple helps to add just the right amount of sweetness.
See, even my 1 year old knows a good thing when he sees it! Plus, isn’t he the smartest thing ever!? He already knows what a fork is for {and he’s teething}.
Peanut butter is a great source of protein and is considered a healthy fat so I love serving it to my kids. As long as there aren’t any peanut allergies in your family try to fit in more peanut butter in your diet!
Ingredients
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup packed brown sugar
- 1 large egg
- 3 tablespoons canola oil
- 1/4 cup skim milk
- 6 oz Greek yogurt
- 1 teaspoon vanilla
- 1/4 cup Planter's Creamy Peanut Butter
- 1 tablespoon honey
- 1 small apple, finely chopped
Instructions
- Preheat oven to 400°. Spray a 12 count muffin tin with cooking spray. If you use paper liners I would spray those also.
- In a large bowl combine the flours, baking powder, baking soda, and salt. Set aside.
- In a medium bowl whisk together the brown sugar and egg. Stir in the yogurt, milk, oil, and vanilla.
- Add the wet ingredients to the dry ingredients and stir until moist.
- In a small bowl combine the peanut butter and honey. If you haven't peeled and diced the apple already do so now.
- Spoon 2 tablespoons of batter into the muffin tins. Press and create a well in the center. Spoon a teaspoonful of the peanut butter mixture in the middle and top with a few diced apples. Repeat until each muffin is done. Top with the remaining batter.
- Bake for 15-18 minutes.

Love a healthy muffin, I hate muffins that are so laden in calories that they should be called cupcakes. These look great!
