I’ve been trying to watch what I eat lately.
As in I watch as I scoop a huge bite of this cookie sundae into my mouth. Bliss.
In all honesty, I really have been trying to track what I eat and as a result I’ve lost a few pounds. I have a teensy weensy problem though…and it’s not fighting off advances from other men as a result of my sheer hot mommyness. Which I am, by the way.
I’m not very good at stretching out my calories to leave enough room for dessert at night so when I have dessert it’s gotta be good.
And since I can never really decide between chocolate chip, oatmeal, or a peanut butter cookie I just decided I would combine them. Then top them with a mountain of ice cream. And chocolate. And whipped cream with a cherry on top.
I think I was blinded by the peanut butter and chocolate.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup creamy peanut butter
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 2 1/2 cups all purpose flour
- 1 cup old fashioned oats
- 1 - 16 oz bag semi-sweet chocolate chips
- Vanilla Ice Cream
- Optional toppings: chocolate syrup, caramel syrup, nuts, whipped cream, maraschino cherries
Instructions
- Preheat oven to 325°
- In a large bowl cream the butter, peanut butter, brown sugar, and sugar. Add the eggs and vanilla.
- In a separate bowl sift together the baking salt, baking soda, and flour. Add to the creamed mixture. Stir until it forms a dough.
- Fold in the oats and chocolate chips.
- Press about 1/4 cup of cookie dough into a whoopie pie pan or press into large cookies on a baking sheet. Bake for 10-12 minutes.
- Allow to cool completely then assemble the sundaes.
Notes
Total time includes cooling time.










I have been watching my calories too and it stinks. Great sundaes. I love the idea of the cookie cup but my favorite topping is the cherry.

this is so tempting and good. i love desserts especially the ones with ice creams like sundaes et all. i never watch what i eat when i am having desserts
Peanut Butter, Oatmeal AND Chocolate chip. This is just too tempting! I should probably wait until i’ve had a day purely eating cookie dough until i try this, but it probably won’t happen!
