I don’t even try to explain to my kids why they seem to have less Halloween candy the day after they go trick or treating. Â It has to be those darn bread ruining elves that have found another hobby. Â I would surely never steal candy from a baby. Â Borrow? Â Maybe.
And during this past Halloween I discovered a candy bar that will forever be known as my downfall; as most chocolate bars are. Â It’s a Take 5 Bar from Hershey’s. Â It is pretzel with caramel, peanut butter, peanuts, and dipped in chocolate. Â The only thing that could possible improve this is the news that is the perfect health food loaded with vitamins and only 5 calories. Â I’m not holding my breath.
I am banking on the health benefits of peanut butter and antioxidants from chocolate. Â Please don’t take that one thing away from me. Â And pretzels are low fat, are they not!? Â See. Â Health food.
This Peanut Butter Pie with Caramel and Chocolate Ganache with a pretzel crust aka TAKE 5 Pie may be harder to pass off as healthy. Â This pie also incorporates a long standing obsession I have with cheesecake. Â What.have.I.done.

Ingredients
- 1 1/2 cups crushed pretzels
- 1/4 cup granulated sugar
- 1/3 cup butter, melted
- 1 - 8 oz block cream cheese, softened
- 3/4 cup peanut butter
- 1 cup powdered sugar
- 1/2 cup roasted peanuts
- 1 cup whipping cream
- 1 teaspoon vanilla extract
- 1/2 cup caramel sauce, homemade or store bought
- 1 cup semi sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350°
- In a small bowl mix the crushed pretzels, sugar, and melted butter. Press into a pie tin and bake for 8 minutes.
- Meanwhile, beat the cream cheese, peanut butter, and powdered sugar in a medium until fluffy. Stir in the peanuts Set aside.
- In another medium bowl whip the cream and vanilla until stiff. Stir in a quarter of the whipped cream into the peanut butter mixture then gently fold in the remaining whipped cream.
- Once the crust is cooled spread the peanut butter filling you just made into the crust. Chill for an hour.
- Pour the caramel sauce over the chilled pie. Set aside.
- In a microwave safe bowl heat the chocolate chips and heavy cream for 30 seconds and stir. Repeat until the chocolate is melted. Whisk to combine if necessary.
- Pour the melted chocolate over the caramel layer on the pie, spreading if necessary. Chill for another hour or overnight then serve.
Notes
The pretzels are crushed best in a food processor but can also be done by hand. Total time includes chill time. © Budget Gourmet Mom
