Potato Chip and Pecan Cookies

I have good news and bad news.

The good news is I’ve managed to create a cookie that is even more powerfully addictive than the average cookie.

The bad news is it has a half pound of butter in them.

The good news?  Butter makes almost everything taste better.

The bad news?  Butter makes almost everything taste better.

And now excuse me while I go do 100 squats.

Potato Chip and Pecan Cookies

Yield: 36 cookies

Adapted from Better Homes and Gardens: Cookies For Kids

Ingredients

  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups finely crushed potato chips
  • 1/4 cup chopped pecans
  • extra sugar

Instructions

  1. Preheat oven to 350°.
  2. In a medium bowl beat the butter, sugar, and vanilla until fluffy.
  3. Add the flour and mix until incorporated. Next stir in the potato chips and pecans.
  4. Drop tablespoon size balls onto a baking sheet. Flatten with a fork dipped in sugar.
  5. Bake for 12 minutes or until golden.

      That’s great Scott! I’d never seen these before until I was flipping through a cookbook. Once I saw them it was a no-brainer…I had to try them!
