Did I really just do this!?
You better believe it baby.
When I came up with the idea to make Pumpkin S’more Brownies I had this picture in my head of exactly how they would taste, look, and how they would come together. As far as baking goes, the easier the better.
That picture in my head looked nothing like this nor was I prepared for the 3 failed attempts that led to this batch. One of them was barely edible while the other two contributed to my “no sugar or fat or baked goods of any kind” diet that I start and stop on a daily basis.
After this successful batch of brownies that diet is off. Indefinitely.
I will say this about this dessert…it could be considered low fat. After all, pumpkin is the main ingredient in the brownies and chocolate does have its health benefits.
Later next week I may have another version of these that includes an extra layer and even more pumpkin flavor. I’m just not sure if this new version falls into the “cursing the diet” category or “accepting the fact that baked goods aren’t considered a major food group” category. I’ll let you know if it’s any good.
In the meantime these four ingredient brownies will keep your sweet tooth satisfied and the inner kid in you screaming for more. Oh wait, that was my actual kids screaming for more. Too bad. They’ll have to find me to get any and after years of listening to them scream I’m getting really good at drowning the sound out. The brownies help too.
