Raspberry Cheese Dessert Pizza

We took the kids out to dinner on President’s Day.  For fun.

I should have stayed home and made this pizza again.

I suppose our evening out was ill fated to begin with.  We had to go dishwasher shopping.

With four kids in tow.

I know, I know.  I really should know better.

It’s just that our dishwasher {and when I say “dishwasher” I’m not talking about me} has been acting funny lately  by turning completely off mid-cycle.  We have been able to resume wash by turning it back on but it has been annoying to say the least.

I can not live without my dishwasher.  Without my dishwasher I become the dishwasher.

Do you even know how many dishes we go through in a day!?

It’s a lot.

So, needless to say, our evening did not go as our pie-in-the-sky dreams would have wished.  We ended up not buying a new dishwasher and the restaurant we went to will probably add us the “don’t serve these people” wall in the back.

I guess it’s a good thing I like to cook stuff.

Stuff like this restaurant inspired dessert pizza.

Raspberry Cheese Dessert Pizza

Ingredients

  • 1 large prepared pizza crust, such as Boboli
  • 1/2 cup cream cheese, softened
  • 1/2 cup ricotta
  • 1/4 cup powdered sugar
  • 1 tsp vanilla
  • 1/4 cup raspberry jam
  • 1/2 cup shredded coconut
  • 2 cups shredded jack cheese

Instructions

  1. In a small bowl mix the cream cheese, ricotta, powdered sugar, and vanilla until fluffy.
  2. Spread over the prepared pizza crust leaving a half inch border.
  3. In a small microwave safe bowl heat the raspberry jam in the microwave for 30 seconds. Pour over the cheese mixture and spread if necessary. Top with coconut and jack cheese.
  4. Bake per the instructions on the pizza crust package.

      YES! It was a recipe inspired from a local pizzeria where I grew up. They are known for their creative pizzas…all of which I am craving right now. Shoot. :)
