Red Velvet Whoopie Pies

Need a last minute Valentine’s Day treat?  These whoopie pies will bring a smile to anyone’s face!

These are a wonderful after school snack for the kiddos or a special treat just to say I love you!  I love to stick them in the fridge and grab one whenever my sweet tooth starts acting up.  The gooey marshmallow creme filling is the perfect compliment to the soft cakes.  Yum!

Make some for your sweetie today!  I am sure they will say “WHOOPIE”

Red Velvet Whoopie Pies

Ingredients

    Cookie
  • 1 box Red Velvet Cake Mix
  • 3 eggs
  • 1/2 cup vegetable/canola oil
  • 1/2 cup water
  • Marshmallow Filling
  • 1/2 cup butter, softened
  • 1 1/4 cups powdered sugar
  • 1 tsp vanilla
  • 7 oz marshmallow creme

Instructions

    Cookie
  1. Preheat oven to 400°. Line a cookie with parchment paper, DO NOT skip this step!
  2. Mix the cake mix, eggs, oil, and water together until smooth.
  3. Drop 1 tablespoonful of batter onto the lined cookie sheet. Space about 2 inches apart so they don't touch each other when they spread.
  4. Bake for 10-12 minutes until a toothpick comes out clean.
  5. Allow to cool then drop a spoonful of marshmallow filling onto one cake and top with another cake to make the whoopie pie.
  6. Marshmallow Filling
  7. Beat together the butter, powdered sugar, and vanilla. Add the marshmallow creme and beat for 1 minute.
