Need a last minute Valentine’s Day treat? Â These whoopie pies will bring a smile to anyone’s face!
These are a wonderful after school snack for the kiddos or a special treat just to say I love you! Â I love to stick them in the fridge and grab one whenever my sweet tooth starts acting up. Â The gooey marshmallow creme filling is the perfect compliment to the soft cakes. Â Yum!

Ingredients
- 1 box Red Velvet Cake Mix
- 3 eggs
- 1/2 cup vegetable/canola oil
- 1/2 cup water
- 1/2 cup butter, softened
- 1 1/4 cups powdered sugar
- 1 tsp vanilla
- 7 oz marshmallow creme
Instructions
- Preheat oven to 400°. Line a cookie with parchment paper, DO NOT skip this step!
- Mix the cake mix, eggs, oil, and water together until smooth.
- Drop 1 tablespoonful of batter onto the lined cookie sheet. Space about 2 inches apart so they don't touch each other when they spread.
- Bake for 10-12 minutes until a toothpick comes out clean.
- Allow to cool then drop a spoonful of marshmallow filling onto one cake and top with another cake to make the whoopie pie.
- Beat together the butter, powdered sugar, and vanilla. Add the marshmallow creme and beat for 1 minute.
