I am not June Cleaver {sorry to burst your bubble}. I don’t think I would even want to be like June Cleaver with her perfect hair, perfect clothes, perfect family. Perfect. How can anyone live up to perfect!? One day you are bound to fail.
You know what!?
It’s okay to fail.
Today was one of those days. You know what I’m talking about. I’m pretty sure the kids were tag teaming just to see how far they could push me until I broke. There was homework to be done, dinner to be made, diapers to be changed, work to be completed. My mind is spinning just thinking about it. Not everything got done.
But there is this…
My cure all for crazy days. It takes 5 minutes to put together and 30 minutes to cook.
You literally stick it in the oven and in 30 minutes you have dinner. Easy.
The other day as I was grocery shopping I walked by those wrapped sausages and just gave in. I’m so glad I did. It’s not a dish I make very often {believe it or not} so when I do I enjoy every bite.
Ingredients
- 2 - 14 oz packages of kielbasa
- 6 small Russet potatoes
- 2 tblsp canola oil
- a few sprigs of fresh thyme or 1 tsp dried
- 2 tsp Shirley J Pizza and Pasta Seasoning
- salt and pepper, to taste
Instructions
- Preheat oven to 450°. Line a baking sheet with foil, just for easy cleanup.
- Open the packages of kielbasa and cut each one into 4 pieces. Place on the baking sheet.
- Wash and cube the potatoes. You may peel them if you desire but I like to leave the skin on. Place the potatoes in a bowl.
- Drizzle the potatoes with oil and season with thyme, Shirley J sesoning, and salt and pepper. If you do not have Shirley J Pizza and Pasta Seasoning you can substitute seasoned salt just make sure you do not use extra salt.
- Toss the potatoes to coat and pour them onto the baking sheet.
- Bake in the 450° oven for 30 minutes. Serve immediately.

The original recipe was for chicken sausage (I have no idea where I got the recipe) but I’m sure either chicken or turkey sausage would be awesome too! Easy definitely has a lot of pull in our house.

Oh, I feel ya. I fail at being a parent virtually daily…or at least, I fail living up to my own expectations of what it means to be a parent. Great dinner to overcome the rough day blues!
