Strawberry Shortcake Cheesecake Sandwiches

There are very few things on this blog that don’t include cheese.

This is not one of those posts.

This recipe, in fact, includes a filling that I have dedicated an entire Pinterest board to.  Cheesecake.  Not only do I have an entire Pinterest board dedicated to it but I am also a firm believer that cheesecake should be considered a main food group.

As much as I love traditional cheesecake it does take quite awhile to prepare and bake and cool so when I discovered this quick way to get the cheesecake flavor I love without all that wait I pounced.  Like a ravenous tiger hungry for lunch.  Rowr.

Since I have a whole litter of ravenous baby tigers {who could probably out eat any adult} I love to keep special treats stocked in my freezer, especially during the summer.  The other day I was looking to update the current stock, or at least what was left of it.

While I was searching the market for inspiration it didn’t take long to decide on something with strawberries.  They are everywhere.  Plump, juicy, and beautiful!  And my kids could each eat their weight in strawberries daily.

The first thing I think of when I hear strawberry is shortcake.  The next thing I think of is COOL WHIP.  Then my mind wanders to cheese {because it’s never far from my mind} and I think of this cheesecake I made about a year ago.

“Why not combine the two!?”, I thought.  With the addition of COOL WHIP Whipped Topping the filling is made in less than a minute and the cookies are made with a cake mix.

With a little borrowed genius from a neighbor I made these strawberry shortcake inspired cookie sandwiches that are quick, easy, and freeze beautifully.  A great last minute evening dessert.

Strawberry Shortcake Cheesecake Sandwiches

Prep Time: 7 minutes

Cook Time: 10 minutes

Total Time: 17 minutes

Yield: 16 Sandwiches

These fun and easy sandwich cookies take the best flavors of spring and combine them. They can be enjoyed right away or frozen for a last minute dessert.

Ingredients

  • 1 box (10.75 oz) white cake mix
  • 2 large eggs
  • 1/4 cup canola oil
  • 1 cup diced strawberries
  • Cheesecake Filling
  • 1 container (12 oz) COOL WHIP Whipped Topping
  • 8 oz cream cheese, softened

Instructions

  1. Preheat oven to 375°.
  2. In a medium bowl mix the cake mix, eggs, and oil until it forms a sticky dough.
  3. Fold in the strawberries.
  4. Drop tablespoon full size balls of cookie dough onto a baking sheet one inch apart.
  5. Bake for 8-10 minutes, until slightly golden.
  6. Allow to cool thoroughly then scoop spoonfuls of the filling onto one cookie then top with a second cookie.

  8. In a medium bowl beat the Cool Whip and cream cheese until fluffy.

Notes

The total time does not include cooling time. It is best to dice the strawberries fairly small so each cookie has a few bits of strawberry in them. Freeze the sandwiches if they won't be eaten within a day since the filling tends to make the cookie a bit soggy when it's left in the fridge for longer periods of time.
