Last year around this time I was preparing for a long but fun summer of entertaining the kids, devouring as much watermelon as possible, and planning to smell like sunscreen as often as I can.  This year is quite different.  I find myself living with my in-laws, still trying to figure out how to entertain four kids for the next few months, waiting to close on our new house, move, and feeding a 3 week old calf by bottle.  My how things can change so quickly.

The one thing that hasn’t changed is the task of devouring as much watermelon as possible and many other summer fruits including strawberries.  Between smoothies, pies, and constant snacking we go through quite a few pounds every season.  Our favorite go to treat is strawberry shortcake.

This classic summer dessert gets a new twist with my versions of strawberry shortcake.  Whether you are feeding a crowd, looking for bite size desserts, or serving guests at an intimate gathering you’ll find something that fits.

Strawberry Shortcake Three Ways

Ingredients

    Strawberry Shortcake Spoons or Individual Parfaits
  • 1 sheet puff pastry, thawed
  • 1 lb strawberries
  • 1 tablespoon sugar
  • whipping cream, fresh or store bought
  • Strawberry Shortcake
  • 1 sheet puff pastry
  • 1 lb strawberries
  • 1 tablespoon sugar
  • whipping cream, fresh or store bought

Instructions

    Strawberry Shortcake Spoons or Parfaits
  1. *Depending on how many servings you need, use 1/3 of the sheet of puff pastry. Each 1/3 should yield 24 cubes.
  2. Using a sharp knife, cut each 1/3 into 3 equal long strips. Cut each strip into 8 equal squares.
  3. Place the squares onto a baking sheet and bake according to the directions on the package watching closely not to burn.
  4. In a medium bowl slice the strawberries and add 1 tablespoon of sugar. Toss together and allow to sit for a bit.
  5. Once the puff pastry is baked and cooled assemble the spoons by placing a puff pastry crouton on the bottom. Place a dab of whipped cream on top of it. Place a few slices of strawberries on a toothpick and stick one end into the puff pastry. Serve.
  6. To assemble the indiviual parfaits place a generous spoonful of strawberries in a dessert dish, top with whipped cream, top with a few more strawberries then place a few croutons on top. Place another dollop of whipped cream on top and sprig of mint, if desired.

  8. Cut the puff pastry sheet into thirds along the creases. Place on a baking sheet and bake according to the instructions.
  9. In a medium bowl slice the strawberries and add 1 tablespoon of sugar. Toss together and allow to sit for a bit.
  10. Once the puff pastry is baked and cooled assemble the strawberry shortcake by placing one rectangle of puff pastry on a platter. Place whipped cream on top of it and place a generous spoonful of strawberries over it. Place a second rectangle gently on top of the whipped cream and strawberries. Top with whipped cream and another scoop of strawberries. Place the last rectangle on top, drizzle with chocolate, if desired, and serve.

    Loving this “3 ways idea”! Have you tried the whole roasting strawberries thing everyone is doing? I’m thinking roasted strawberries and shortcake in a skillet of some sort…. Mmmmmm
