Tex Mex Turkey Pot Pie

Turkey Day is upon us and I can’t wait to sink my teeth into the moist turkey, gorge myself on mashed potatoes and gravy, then fill the last few nooks in my belly with pumpkin pie.

Once the feast is over we munch on leftovers for a couple days before it gets to be a little monotonous.  After a couple turkey sandwiches I would be happy to never see another turkey sandwich until the following Thanksgiving, or Christmas at least.

The other thing that happens after the hours spent in the kitchen cooking, baking, stirring, whipping I want to sit.  For a looooong time.  Usually I’m looking for quick and easy meals following the big day and using up what leftovers I have on hand.

That’s where the Tex Mex Turkey Pot Pie comes in to play.  It takes a while to bake but you can have it on the table in 30 minutes.  It’s just a matter of mixing it all together then sticking it in the oven.  Now that’s my kind of meal.

The leftovers I used to make this dish are my Citrus Roasted Turkey Breast and Traditional Southern Succotash.

Tex Mex Turkey Pot Pie


  • 2 cups cooked turkey, diced
  • 1 cup leftover succotash
  • 1 cup frozen corn
  • 1 - 15 oz can black beans, drained and rinsed
  • 1 - 8 oz can tomato sauce
  • 1/4 cup barbecue sauce
  • 1 6.5 oz packet corn bread
  • 1/2 cup shredded cheddar cheese


  1. Preheat oven to 400°
  2. In a medium size baking dish mix the turkey, succotash, corn, and beans. Stir until combined.
  3. In a small bowl combine the tomato sauce and barbecue sauce. Pour over the turkey mixture.
  4. In a medium bowl mix the packet of corn bread according to the directions. I used Betty Crocker Cornbread and Muffin Mix.
  5. Fold in the cheese. Spread over the turkey mixture.
  6. Bake for 20-25 minutes or until the cornbread is firm to the touch and slightly golden. Serve immediately.
