The Perfect Roast Beef and Garlic Mashed Potatoes

I. Am. Tired.

In fact, I am so tired that keeping up with the blog this week has almost been a chore.  I love writing, editing, cooking, photographing, and everything about this blog.  This is my happy place.  It really is.

YOU make this my happy place.

It amazes me when I get feedback from anyone other than my mother about my recipes.  I just love that what I write and post touches other people by making life easier or inspires them to try something new.

I know I don’t say it enough but THANK YOU!

Despite my fatigue, which is the result of lots of stuff, when I started editing these photos I got all giddy inside.  I had taken these pictures a couple weeks ago before my unfortunate meet up with the mother of all colds and hadn’t looked at them since.

They turned out rather fabulous, if I am to be perfectly honest.  And I’m not at all trying to sound conceded.  Photography is not exactly my forte so a “photo shoot” can actually be quite a chore when I’m not in the right frame of mind.  It’s actually a lot like exercising for me…I feel the best and most accomplished when it’s over.

I don’t want my photography in any way to turn you off to the fact that these really are meals I make for my family either.  In fact, as soon as I finished shooting these pics I moved the food from the floor right to our dinner table.  The whole shoot took maybe 15 minutes from set up to final shot.

I haven’t been doing a lot of photography this week because I am still recovering from that cold I mentioned and, at the risk of this post turning into the “poop diaries” my kids have been suffering from less than favorable diapers.  Which means lots of wrestling, Desitin everywhere, and more baths than I can count.

Not exactly the perfect prescription for cooking, baking, writing, photographing, etc.

I am definitely ready for the weekend.  The weekend means relaxation.  And this particular weekend means mr comes home to stay indefinitely until the next business trip at least.

All of these ramblings have little to do with food except for the fact that this is my kinda weekend meal.  It requires very little work which is just what I need.

The Perfect Roast Beef and Garlic Mashed Potatoes

Ingredients

  • 5 - 6 lb beef rump roast
  • 3 - 4 onions
  • salt and pepper
  • Shirley J Slow Cooker Beef Seasoning
  • Mashed Potatoes
  • 5 - 6 large russet potatoes
  • 2 cloves garlic
  • 2 tblsp butter
  • 1/2 - 1 cup buttermilk
  • salt and pepper

Instructions

  1. Spray a 6 qt slow cooker with cooking spray.
  2. Peel and cut the onions into wedges. Place in the slow cooker. Set roast on top of onions. You may cook a frozen roast, in fact mine are almost always frozen when I start cooking them, it just takes a bit longer.
  3. Follow the directions on the Shirley J seasoning if you are using it or just season with a teaspoon each of salt and pepper and garlic powder.
  4. Cover and cook on low for 8 - 10 hours. If frozen, I cook on high for 3 hours then cook on low for an additional 5-6 hours.
  5. Shred and serve with mashed potatoes.
  6. Buttermilk Garlic Mashed Potatoes
  7. Fill and large pot half way with water.
  8. Clean, peel, and cut the potatoes into cubes. Peel the garlic. Place the potatoes and the garlic in the water filled pot and bring to a gentle boil. Cook until the potatoes are fork tender, about 15 minutes.
  9. Drain. With a large fork or potato masher smash the potatoes and garlic cloves. Add the butter and season with salt and pepper. Mix and add the buttermilk a little bit at a time until the potatoes reach the consistency you wish.
  10. If you would like creamier mashed potatoes I like to use an immersion blender for about 30 seconds. Be careful not to cream too much or the starch from the potatoes will make them stiff.

      Oh Jen…you are so good to me! And here is my little secret about the wood, those wood planks are from Home Depot and they were, wait for it, FREE! I’m sure the guys thought I was crazy when I stopped them from taking wood scraps out to the dumpster and asked to have it! Thank you so much for sticking around. I’ve loved meeting so many new people through blogging. It’s been the best part!

    Oh how I love a good roast! They’ve been so spendy this year, I have yet to make one, and every week I put it on my grocery list hoping to find a good price and each and every week I’m at my budget with groceries. Sigh.

    I do much of the same with my photos too. It’s a process that I love to do, except when I’m feeling rushed. And since we have dinner around 6-7pm the lighting sucks! So most of the time, I end up taking our dinner pictures while my kids and husband are sitting at the table waiting for me to be done so we can pray and dig in, lol! If I don’t take a picture, my youngest always inquires as to why I’m not. Haha, I guess it’s a habit now for them so see me shooting pics.

      That sounds just like our house! I was decorating the house for Halloween with candy corn and my 3 year old said “Can you take a picture now so I can eat them?” I just couldn’t stop laughing. It was too cute. As far as the roast goes, I hope they come down in price soon. We raise our own beef so I have a freezer full outside. Making roasts is a bit more budget friendly for me and I forget that sometimes. It’s such a great, simple meal.
