A couple weeks ago my father-in-law was in the hospital after the fall roundup incident and I was suddenly faced with the problem of coming up with some creative meals and snacks that my mother-in-law could take to the hospital with her. It was also shortly after a reader asked me if I had any cold sandwiches she could take to work.
So I sat with that idea for a bit. And sat. And dreamed up some yummy cookies. Then ate a yummy cookie. And another.
It’s a sandwich. Why is it so darn hard to think up a creative sandwich that would be okay without immediate refrigeration that’s not peanut butter and jelly and can be eaten on the run!? Apparently I was over thinking it because as soon as I walked into my pantry to try to find some inspiration it hit me like a ton of bricks falling from a 10 story building.
I always pick up these whole wheat tortillas {Maya’s} when they go on sale at our grocery store for $1. They freeze really well and I love everything about them. They pair wonderfully with the Italian flavors in this sandwich and I’ve become quite addicted to this. Perhaps I should buy stock in tortillas and a bigger freezer.
Ingredients
- 1 - 6" whole wheat tortilla
- 1 tablespoon store bought or homemade pesto
- 2 tablespoons marinated bell peppers, roughly chopped
- 1 slice deli sliced turkey
- 1 slice deli sliced provolone
Instructions
- Spread the pesto evenly on one side of the tortilla. Now on the right side of the tortilla spread the bell peppers out into a row. Top with the sliced turkey and sliced provolone. Roll the tortilla from right to left.










Easy, delicious and totally portable! Perfect
Smothered with pesto?! Heck yeah!! I could go for ten of these! I think I will.
