Upside Down Peach Crunch Cake

Last week was the best worst week of my life.

I think.

Thankfully there are good friends and prayers and bacon.  And Diet Coke.  And an easy cake I’ll share with you in a sec after I tell you exactly why it was the best worst week of my life.  I think.

It all started months ago when our family found out our nephew {son, grandson, cousin} had spina bifida.  It was a tough blow which his parents handled with strength and fortitude.  After months of waiting he was born last week.

I can’t thank you enough for your prayers.  When I sent the word out on Facebook and Twitter on Monday I was overwhelmed with your kind thoughts and prayers.  Truly, truly blessed to have you all in my life.  Getting teary eyed just thinking about it.

Also truly blessed to have this new perfect little nephew in my life.  He is truly a miracle and we just found out he gets to come home today!

We also had another beautiful nephew enter the world on Friday the 13th of all days!  How cool is that!?  Talk about GOOD luck.

And while all of this was happening I was in Park City attending EVO.  It’s a conference for women in social media and my life path will forever be altered by the incredible women {and a few men} I met there.

Needless to say it was a busy week.  I supposed looking back it was mostly good but sure stressful to be away during all of that family business.

During times like this past week I absolutely love to cheat a little when it comes to dessert in the form of boxed mixes.  This upside down peach crumb cake is a great way to add a little punch to a generic box cake and add some seasonal fruit.  That makes it breakfast worthy in my book.

Upside Down Peach Crunch Cake

Prep Time: 7 minutes

Cook Time: 30 minutes

Total Time: 1 hour

Yield: Serves 12


  • 1 box yellow cake mix
  • oil, eggs, water according the boxed cake directions
  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 1/2 cup old fashioned oats
  • 4-5 fresh peaches, peeled and sliced


  1. Preheat oven to 350°
  2. Place butter in a 9 x 13 baking dish. Melt in the oven.
  3. While the butter melt mix the cake mix according to the directions on the box. Set aside.
  4. Once the butter is melted stir in the brown sugar until dissolved. Sprinkle evenly with old fashioned oats. Layer evenly with sliced peaches.
  5. Pour cake batter over the fruit and spread evenly.
  6. Bake for the amount of time directed on the cake box for a 13 x 9 pan.
  7. Once baked and a toothpick comes out clean flip immediately onto a serving platter. Allow to cool and serve.
