Hello. {believe it or not, it took me 15 minutes to come up with that brilliant ice breaker}.

Krista asked me to come up with a “healthy cookie,” and at first I just laughed, but she wasn’t laughing. She was serious!
Whenever I think of a “healthy cookie,” I think of cardboard.
With nuts.
In all honesty this couldn’t have come at a better time for me cause I just started my diet again on Monday. {for the 23rd time this year} Gotta get in shape for the Holidays!
I racked my brains and I came up with a low calorie cookie… that tasted like cardboard. With nuts.
Don’t worry! I scrapped that idea and I came up with an even better one!
I have this really cool app that lets me create these recipes and tells me how many calories it is. These little beauties came out to just 79 measly calories a cookie! {dear Santa, I would like will power for Christmas this year}
Not only are these extremely tasty, they are also really festive with the bright green pistachios and vibrant red craisins. The combination of the pistachio, craisins, and white chocolate mixed perfectly together with the cake batter make these one hard to resist cookie. They are soft, sweet, a touch of saltiness, and ONLY 79 CALORIES!!
It’s almost like I took my favorite trail mix and wrapped it up in cake batter and baked it into the perfect “healthy cookie.”
You can thank me later.

Ingredients
- 1 box White Cake Mix
- 1 tsp baking powder
- ½ cup vegetable oil
- 2 eggs
- 1/3 cup Craisins (dried cranberries)
- 1/3 cup Pistachio kernels
- 1/3 cup white chocolate chips
Instructions
- Pre heat oven to 350°.
- In a large bowl combine cake mix and baking powder and stir to combine. Add the oil and eggs and stir with a spoon until it gets too hard, and finish mixing with your hands. (or if you want you can use the paddle attachment on your stand mixer) Throw in the pistachios, Craisins, and white chocolate chips and mix until combined.
- Drop by full teaspoons onto a baking sheet. Bake for 10 minutes. Remove from oven and let cool on sheet for 1-2 minutes before removing to cooling rack. Store in an air tight container.
