So guess what? Â I’m kinda a geek for anything doughy that happens to have a gooey center.
I mean it’s a no brainer right!?
For one I’m a total carb-o-holic. Â Two, the fillings are endless. Â END. LESS.
A year ago I posted these breakfast pocket. Â They kinda got popular and since the entire family loved them I thought it was time to give this little guy a makeover or at least a sibling. Â The original does have it’s star qualities.
Meet the Breakfast Pocket’s sister, Whole Wheat Peanut Butter and Jelly Pocket.
She’s a portable little lunch that also enjoys being devoured at breakfast, snack time, or dinner. Â She is made with a whole wheat dough for added nutrition and filled with a classic scoop of peanut butter and jelly. Â You can’t go wrong!
Now in the past I’ve had a difficult time working with whole wheat flour. Â Is it just me or does some whole wheat flour look like ground up cardboard? Â I’m not naming any names but let’s just say I’ve become rather picky with my flour which is why I was thrilled to connect with Bob’s Red Mill.
They have a fabulous array of products, many of which I can buy at my local store. Â I bet you can guess one product that is becoming a favorite of mine. Â You can bake with it, it doesn’t look the least bit like cardboard, and it makes the most wonderful whole wheat dough. Â Yup. Â Their whole wheat flour passed my test and I’m kinda in love.
And I think my kids are too since I’ve already made three batches of these pockets and I still can’t seem to keep them in stock.

I sure hope you’ll give these pockets a try and be sure to check out my breakfast pockets post for a savory filling! Â Oh, and did I mention these freeze really well? Â They do which only makes them more awesome, if that was even possible.
Ingredients
- 1 1/2 tablespoons active dry yeast
- 1/2 cup warm water (110°)
- 3/4 cup evaporated milk (110°)
- 1/2 cup vegetable oil
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon salt
- 2 cups all purpose flour
- 1 1/2 cups Bob's Red Mill Whole Wheat Flour
Instructions
- In a medium mixing bowl dissolve yeast in the water.
- Heat the evaporated milk on the stove top or microwave. Add the milk, oil, and sugar to the dissolved yeast. Beat in the egg.
- Stir in the salt and the all purpose flour. Next add the whole wheat flour, mixing just until combined. Do not knead. Cover and let rise for 1 hour.
- Preheat oven to 350°
- Punch down the dough and divide into 16 equal pieces. Roll each piece out onto a lightly floured surface into a disk. Place 1 tablespoon of peanut butter and 1 tablespoon of jam or jelly in the center of the disk. Grab the sides and pinch them together to form a pouch.
- Bake for 15-20 minutes until they are lightly browned.
- Store in an air tight container in the refrigerator for up to a week or freeze for up to 3 months.
